Holy Moly Guacamole!

Once you try this, you'll know why it is called the "Holy Moly Guacamole" recipe! Guacamole is a favorite dip for vegetables, baked tortilla chips, or served as an accompaniment to almost any dish. This is a unique healthy version of guacamole that can be eaten as a planned snack and taken as a dish for potlucks.  It contains a surprising ingredient that normally isn't used for guacamole.  

With avocado as the main ingredient for guacamole, it's a good food choice. Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins, and Folic Acid.  They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with it.

Holy Moly Guacamole Recipe

Recipe by: Lisa Lillien (a.k.a. Hungry Girl)
Makes 8 cups, for 24 servings

Ingredients

  • One 15-oz. can early/young peas, drained
  • 4 oz. (about 1/2 cup) mashed avocado
  • 1/4 cup fat-free plain Greek yogurt
  • 1 tbsp. plus 1 tsp. lime juice
  • 1/2 tsp. minced garlic
  • 1/4 tsp. salt, or more to taste
  • 1/8 tsp. black pepper, or more to taste
  • 1/8 tsp. ground cumin
  • 1/8 tsp. chili powder
  • 1/3 cup chopped cherry or grape tomatoes
  • 1/4 cup finely chopped onion
  • Optional: chopped fresh cilantro, chopped jarred jalapeños

Directions

1. Mash peas in a medium-sized bowl. Or puree in a blender or food processed and transfer to the bowl.
2. Mix in mashed avocado, yogurt, lime juice, garlic, and seasonings.
3. Stir in the chopped tomatoes and onions.
4. Stir in optional ingredients if you will be using them.
