Tender Turkey Meatloaf With Parmesan Mashed Cauliflower

Serves 4

1 small head of broccoli, florets removed
1/2 cup quick oat (uncooked)
1/4 cup non-fat, skim milk
2 eggs
½ cup Skinny Chef cherry chipotle sauce or low sodium bbq sauce
1 pound ground white turkey meat
2 cloves garlic, minced

Mashed Cauliflower
1 head cauliflower, cut into florets
1 tablespoon olive oil
1/2 cup grated Parmesan
¼ cup fresh goat cheese
¼ teaspoon salt
Preheat oven 350° F. Place the broccoli florets in the food processor and process until finely chopped.  Transfer to a large bowl. Place the oats and half the skinny chef or bbq sauce into the bowl along with the broccoli and stir well.  Soak for 15 minutes on the counter top. Add the turkey and garlic, and mix well.

Transfer meat mixture into a 1-pound loaf pan and smooth the top with a rubber spatula. Top with the remaining Skinny Chef sauce or BBQ sauce.

Bake for 45 to 50 minutes, until the meatloaf is no longer pink in the center, test by inserting a knife. Rest 5 minutes before slicing and serving.

In the meanwhile make the cauliflower.  Bring a large stockpot fill with 1 inch of water to a boil. Add the cauliflower and cover. Cook 3 to 4 minutes, checking the level of the water occasionally until the cauliflower is fork tender. Add ¼ cup of extra water of the cauliflower isn’t tender after 4 minutes and continue to cook 1 minute more.

Transfer to a food processor to puree or puree using an immersion blender.  Add the Parmesan, goat cheese, and salt. Puree until smooth. Serve immediately with meatloaf.

Nutritional Stats Per Serving (2 slices meatloaf, 1 cup cauliflower puree): 371 calories, 43 g protein, 25 g carbohydrates, 11 g fat (5 g saturated), 163 mg cholesterol, 5 g fiber, 589 mg sodium.
