Baby arugula, roasted red peppers, pine nuts, goat cheese, and marinated & sliced Portobello mushrooms tossed in fat-free honey Dijon dressing.

I WISH I could say I thought of this salad but I got it from Illy (coffee place down the street). HEAVEN IN A BOWL!!!

I am having a love affair with Jones Broccoli Maddness from Sweet Tomatoes. Broccoli, raisins, cashews, bacon bits, tossed in an almost coleslaw type dressing. Yeah.. sometimes you just hit on something that doesn't just speak to your taste buds, it sings for them!

That sound delish - but without the dressing for me (I hate the taste of honey anything )  I bet a few baby beets in there would enhance the deliciousness too ...

 My favorite salad is baby arugula, pomegranate seeds, crumbled goat cheese, and sliced almonds. Then I make a dressing of extra virgin olive oil, unfiltered apple cider vinegar, a diced shallot, touch of agave, and S&P. Yum! Can't wait until I can eat salad again.

I'm just loving on some salad at this stage... I can't believe how big it looks in a bowl until you grind it down... and swallow...

 My favorite lately is baby greens, grilled chicken, apple chunks, goat cheese, sesame sticks and some nuts/seeds (pumpkin, sunflower, almonds), topped with a light balsamic viniagrette.  OBSESSED with goat cheese right now and can't get enough.
