What's on your Monday Menu, RNYers?

Good Morning! Back at it, folks...it's Monday all over again. Are you ready? Thanks to everyone who posted a pic on Friday. I loved seeing all of your confident selves :)

The weekend was okay. Saturday was super lazy, which was just what the doctor (psychologist?) ordered! And yesterday I took Grim to the airport at 5:30am so I was home alone all day yesterday and this morning. I spent my alone-time being productive and getting organized--especially about food, and I have a week's worth of lunches packed and ready to grab and go! I usually eat 5 out of 6 meals "on the road", so it lifts a huge burden not to have to plan and pack everything on the fly.

I decided to stay at my parent's house tonight, because they live a little closer between two of my schools that are furthest away so I will probably shave an hour off the trip tonight and tomorrow morning. Yay! But since I am staying there, I am not sure what's for dinner.

QOTD: Did you lurk on OH before you started posting? For how long? What made you start posting? Personally, I never lurked, I just jumped in with my first question about 8 years ago (different account back then) and inserted myself right into the conversation. But no one has ever accused me of being shy!

Good morning JB!

I'm so tired. I woke up and the prospect of interval training was too much. So no gym today. Moving and getting back to my presurgery gym routine while working 6 days a week has been exhausting.

QOTD: yes, I lurked. I started shortly after I had surgery and I didn't post until I was about 4 weeks out. Part of it was the barrier of having to set up an account. But I also waited until I felt like I legitimately belong here. I know I could have started posting even pre-surgery... but I waited. Also I had a question I wanted people's input on! I really wanted to find a protein bar that didn't make me pukey, dizzy, etc to keep in my purse for unplanned missed meals. Still looking, btw. I'm apparently quite sensitive to protein bars.

Plan today:
B: coffee with 2 oz premier protein
S: cottage cheese
L: Morningstar grillers prime patty and bean salad
S: protein fudge. Another eggface recipe I whipped up last night. Excited to see how it turned out.
D: Morningstar chick'n strips with marinara and Italian blend cheese.

Totals:
Calories: 737 Protein: 77 Carbs: 44 (added in calories and carbs for some diet cran, too)

Exercise: can't gym. Too exhausted. Work from home day with laundry and more packing if I manage.

You're only about 6 weeks post-op? Sounds like you are doing great with your exercise! I wasn't at the gym until I dropped most of my excess weight.

I'll be 8 weeks on Wednesday. They lifted my activity restrictions at 6 weeks. Cardio is my anti-depressant so I try to get something intense in as often as possible. I've been trying to do the interval training too because you guys have impressed on me how important it is to take advantage of the honeymoon period. And I know if I tough it out a couple weeks it'll get much easier. Well... intervals will get a little easier anyway. Not MUCH easier. I used to do them when I lost weight from a medically supervised diet I did 4 years ago. But as the weight came back it got harder and harder.

Definitely getting stronger, but every pound I lose is one less I'm carrying with me through all of the running and jumping!

Make sure to tell us how the fudge was!!! (Of course my eyes would zero in on the word 'fudge'!)

Fudge update!

overall I'm pleased. It didn't set in the fridge, though, so I popped it in the freezer. Then it was really chewy like a tootsie roll, but it tasted more like a really good brownie protein bar without that nasty sugar alcohol taste (and no nasty sugar alcohol nausea!!!)

i think I went a little overboard on the cocoa powder to make up for my lack of chocolate protein powder.

Here's recipe I started with:

Fabulous Fudge

prepared with 4 scoops eas vanilla whey and 2 tbs coconut topping it's 81 cal, 5g protein, 3 carbs for 1/16th of recipe. I just paired off all my little squares in snack sized bags and tossed them in the freezer.
