WHOLE ENCHILADA CHICKEN SOUP. OMG!!!
Do you have that gotta eat Mexican food now craving? My friend sent me this recipe and it's the best ever! I think it's originally from Hungry Girl.
When I make it, I substitute frozen corn for fresh off the cob corn.
Whole Enchilada Chicken Soup
3 cups fat free chicken broth
1 1/4 cups finely chopped celery
1/2 cup diced sweet yellow onion
3 cups green enchilada sauce
One 15 ounce can pure pumpkin
10 ounces cooked boneless skinless chicken breast, cubed or shredded
1 cup frozen corn
Hot sauce to taste if you want it
toppings: ff sour cream, shredded ff cheddar cheese, baked tortilla chips
Directions:
In a large pot, bring broth to a low boil on the stove. Add celery and onion, and simmer for about 5 minutes, until slightly tender.
Stir in enchilada sauce and pumpkin. When sauce returns to a low boil, add chicken and corn. Mix well. Cook 3-5 minutes or until all ingredients have heated.
Makes 9 servings
1 cup, 105 cals. 1.75 gm fat. 641 mg sodium, 12.5 gm carbs, 2 gm fiber, 3 gm sugars, 11 gms protein.
