Yummy!!  Reminds me of dinner tonight, except I had spinach instead of kale, a cold Korean spinach salad.  I am so grateful that 2 oz looks so BIG to me now.  Thanks for the kale idea!!

Frisco, 2 quick questions for you if I may...

What rices are you finding work best in maintenance? Love me some Jasmine....
Never cooked with Kale but love collards and spinach. How should I prepare?

Thanks for all the yummy and beautiful posts!

1- To me although I like all rice..... Japanese Short Grain White Rice Rules!!!!!

2- That was the first time I Sauteed Kale.... Never done Collards....Kale is a little tougher than Spinach.... it can take a little more heat.... actually matches well with the Onion cooking time.... Spinach can go away real fast.

I've cooked kale a few times it's touchy if you over cook it it's really bitter and gross, it's not as quick as spinach, and no where near the time of collards

That's good to know.....

I tend to under cook all veggies.....the firmer the food....the longer it will stay in your sleeve for longer satiety.

That really looks good.  I make something similar with red onions and balsamic vinegar and olive oil.  Add some goat cheese and I think I hear heaven calling.

You just reminded me what this needed.....and I had it in the fridge....feta or blue crumble....

and balsamic might be good with Kale (Kale is very new to me....)

So.... Red Onions in a saute pan with EVOO......flip it a few times.....add balsamic.....flip a few more times......serve over or in a protein.....add goat cheese and feast?
