Your favorite recipe
I am about to move into stage 3 foods and I will be totally honest by saying I am not a great cook. If I have a recipe I can manage :). Would any of you be willing to share your favorite post VSG recipe? You know...that one meal you have at least once a week. This would be soooo very helpful to me. Also, is there a link to other recipes you may know of? Thanks so much :)
I love to eat Crack Slaw. It would probably not have settled well with me this early out because I had problems tolerating hamburger but if you can it is addicting. To be honest it did not sound that great to me but people kept talking about it and I finally tried it and have gotten several people in my office hooked on it. For me it is even better after you let it set overnight because the juices soak up into the food.
The staple that I live on is KRAFT Fresh Take Chicken. I usually make this on Sunday afternoon/evening and pack in my breakfast and lunch for the week at work. It is super easy. I use chicken thighs because I like dark meat so you might need to adjust the cooking time to a little longer to make sure it is cooked inside but don't over cook or it will be dry. The KRAFT Fresh Take is in the cheese section. You just dip your chicken, pork chop, fish into the season bag, place in a pan/cookie sheet with sides and cook. I actually like eating it cold but you can easily reheat in the microwave.
We also grill and I have my husband cook extra and I take in my breakfast/lunch all week.
I've had good success with the recipes on TheWorldAccordingToEggface blog, particularly the chicken / artichoke casserole (I LOVE marinated artichokes) - used to eat that a lot. These days I eat a lot of frozen turkey meatballs (Trader Joes), usually topped with a couple of tablespoons of low-sugar marinara sauce, a couple of tablespoons of cottage cheese, and a tablespoon or two of shredded light mozzarella. That's my go-to on nights when I need to pull together a super-quick meal - 5 minutes in the microwave.
