Breakfast - crustless cheeseburger quiche and green beans

Lunch - pesto chicken and broccoli slaw

Dinner - Paprika pork chops and green beans

vitamins -done

water - ok

exercise - recumbent bike - soon

Hi,

I searched the internet for a recipe, and then I substituted plain Greek Yogurt for the mayonnaise.  (too many calories, as much as I'd like it).  I substitute half and half for the heavy cream, which still adds some calories, but I make a double recipe and it makes 10 servings which is about 370 calories per serving.  I can live with that. 

 

Crustless Cheeseburger Quiche

 

Ingredients:

  • 1 lb ground beef

  • 1 -2 teaspoon onion powder

  • 1/2 cup heavy cream

  • 1/2 cup mayonnaise (Substituted nonfat Yogurt)

  • 3 eggs, beaten

  • garlic powder, to taste

  • pepper

  • 1 cup shredded cheddar cheese


Directions:
1. Brown ground beef and onion powder in a large skillet over medium heat, drain off fat.
2. Mix together eggs, cream, mayonnaise, garlic powder, pepper and shredded cheddar cheese.
3. Put browned beef into a 9 inch pie plate, pour remaining ingredients over the beef.
4. Place in a preheated 350 degree oven and bake for 40-45 minutes.

B:  3/4 cup oatmeal w 1 T granola, splenda

S:  cuke from the garden

L:  strawberry chobani with 3T almonds and walnuts.  Didn't realize how much i had gotten at salad bar and then ate them anyway!  Very filling.

D:  chicken cacciatore

S:  idk

E:  walked 1 hour at lunch, probably another walk after dinner with the pooch

I'm really liking my yoga app for doing yoga at home!  I still prefer going to classes when I have that option, but I don't always, so the app works out really well.  We've got a lot of food in the fridge at the moment, so I'm going to skip cooking dinner tonight and we'll just have leftovers instead.  Not sure which ones I'll eat - I guess it depends on how I'm feeling when dinner comes around.
