Cucumber salad

I love fresh cucumbers from the garden. It's a summer time favorite. Cucumbers with the skin left on do a great job at closing up the pyloric valve making them a satisfying choice. 

I made cucumber salad last night and was reminded how VSG friendly my recipe is. It's fantastic for the weight loss phase. With our sleeves I find it best to keep the dressing separate from the cukes and top sliced cucumbers with the dressing. 

cucumber salad dressing:

1/2 cup 0% Greek Yogurt

4 TBS finely chopped dill

1 glove garlic, pressed.

salt to taste.

Mix the yogurt, dill and pressed garlic clove. Season with salt to taste.  (Just over 10 calories per TBS)

Your recipes reminds me of my Tzatziki. i sometimes do a cucumber forward Tzatziki.

English and Japanese cucs are my fav !!!

Your cuc salad on top of grilled chicken would be killer !!!

Lemon cukes are quite good, too, if they are picked when still very small. Super crisp and the skin is fibrous and quickly closes that pyloric valve. If they are too big, forget it. Too much in the way of seeds! I've also found that pickling cucumbers work really well for the salad. The average supermarket cucumber is too seedy, so I always scrape out the seed portion when making the salad.

Yup! One of the very few green things I really enjoy eating. 

One thing I don't bull**** myself about is the way I ate and eat. I am a meat and starch guy through and through. I did not get obese eating too much healthy food. I got fat on lots of refined carbs, sugar and meat!

Sounds delish!!! I've been making mine with a little rice wine vinegar and a dash of toasted sesame oil. Just love cucumbers!
