Anyone make their own cottage cheese?

Wondering if anyone here makes cottage cheese. Tried for the first time tonight and liked it, but looking to trim back calories. I used 2% milk, strained out the whey, added in half and half with some salt. Wondering if I used fat free milk with dried skim milk added in before the boil cycle if that would work? Has anyone tried it with just milk and salt added at the end? I only got around 2 cups or so of final product, but it was much tastier than what you buy. Well worth the price of a gallon of milk ($2 where I live).

I love cottage cheese, so I am interested in a good recipe to try too (with relatively low calories - ideally under 90 per 1/2 cup).

I think next weekend I will just try making it with the skim milk with dried milk added in. If it turns out I will let you know. The recipe is super easy. 1 gallon milk, bring up to 180F. Turn off heat source. Add 3/4 cup distilled vinegar and very gently stir just until combined. Let sit 30 minutes. Separate curds and whey. Gently rinse curds. Wisk 1/2 tsp salt into 1 cup cream or half and half or milk (less fat content is less creamy). Gently stir cream into cottage cheese.
