i wanted to share a recipe that I tried yesterday. I've been having serious food fatigue. This was a nice change and next i'm Going to try a Mexican flared chicken meatloaf.

  • 2 pounds ground chicken
  • 1/4 cup egg whites
  • 1/3 cup cornflake crumbs
  • 2-3 cloves garlic, minced
  • 5 slices bacon, cooked and chopped
  • 1 packet ranch dressing seasoning, powder(I'd add a half a packet next time)
  • 1 cup shredded cheddar cheese
  • 1/2 cup light ranch dressing

  1. Preheat the oven to 350 degrees.
  2. In a large bowl combine the ground chicken, egg whites, crumbs, garlic, bacon, ranch seasoning, and 1/2 cup of the shredded cheddar cheese. Mix the mixture with your hands. Place into a greased loaf pan and form the chicken mixture into a loaf shape. Top the meatloaf with the ranch dressing.
  3. Bake for 50-55 minutes or until chicken is cooked. When done remove and remove and add the additional 1/2 cup of shredded cheddar cheese on top. Return the meatloaf to the oven until the cheese is melted. Remove from the oven and let the meatloaf rest for 5-10 minutes before serving

I put it at 12 servings per recipe but actually ate less.

That does sound good! I'll pass the recipe on to my hubby...since he does much of the cooking.

I may cut it in half since it's only the two of us..

It's hard for me to share recipes, as my cooking is very improvisational. If you like fennel, I do have two recipes: a chicken soup (no pasta) and a sausage and lentil stew. I'll try to remember what I threw in the instant pot if any of that sounds good to anyone. I know that fennel is polarizing, so no hard feelings if you aren't interested.

I love fennel but i've never really cooked with it -- I've grilled it a couple of times and I add fennel seed to any italian sausage i buy -- it seems outside the midwest, you can't get good italian sausage unless you doctor your own (my opinion only). I'd be interested in your iP recipes!
