spicy meatloaf

I guess that's what you'd call what I threw together tonight!  LOL!

I had a pound of ground beef that I'd thawed out and needed to do something with, so I figured I'd wing it and see how it turned out!

I threw in 2 eggs, a baggie full of crushed hot pork rinds, about 2 tablespoons of salsa and some diced jalepenos.  I mushed it all together in a bowl and threw it in the oven in a greased loaf pan. 

It was actually pretty damned yummy!  I ended up eating the entire thing over the course of the night!  Granted I started eating on it at 5:30 and am just now getting ready for bed at midnight.....

Anyhow, I just thought I'd share. 

Don't be afraid to just throw crap together on a whim....It might turn out good!  :)
I love Meat Loaf and Spicy stuff, I will have to whip something up. Thanks!

So you got the yummy stuff and those four kids got what - gruel?!  Just kidding - sounds delicious but maybe more for grown up tastes.  Thanks for sharing and I learned that pork rinds come in flavours other than plain.

 No pork rinds in france,  but oooh meatloaf sounds good.  I know what im making for dinner.
 Sounds great!  I have been in a 'meatloaf' mood.  

One of my favorites is buffalo chicken sloppy joe.
Ground chicken crumbled cooked down (cook all the water out too) add to some tomato paste and Frank Red Hot buffalo wing sauce.  I no longer put this on a bun but in a bowl and top with plenty of crumbled bleu cheese.

Mmmm sounds good, might have to make some of that over the weekend. I have got into the habit of have a cook up on sundays and then we have food for during the week, I put on my Ipod or the cooking channel, have a glass of white wine and soda and cook away!! My BF says he never sees me as happy as when I'm chopping and slicing oh and tasting!!lol

I made the creamy taco soup someone posted the other day last night, OMG it was so good and using 1 pound of ground beef makes a ton of soup!! I know what I'll be eating for the enxt few days!!lol

You have just described my cooking style.(*grin*)
Like my mother I always have made my meatloaf with Open Pit BBQ sauce lots of onions and jut a little bit of torn up bread.... although NOW regular porkrinds work fine. It's QUITE spicy as meatloaf should be!  :D

sadly really spicy and pretty much beef in general doesnt sit well for me... YET. I will try again in a week.  ;)  I keep testing it.
