Easy Lunches to Pack!

Lunch Ideas!

So I'm looking for some more lunches that might work for me. I can't cook at work, can reheat a little but have limited time. Currently I have a few that I rotate between and would just like to add 1 or 2 more.

1) Chicken Salad (105g chicken, 13g mayo, 15g dill relish) with a low carb cracker or something.

2) Tuna Salad (same as above but tuna)

3) Egg Salad (2 eggs, 18g mayo) with a slice of bacon

4) Broccoli, Chicken with Alfredo sauce (Healthy Choice 4 net carbs)

5) 4 oz of lunch meat with cheese

Okay! what else does anyone else have??

Italian Bake- Thick meat sauce on bottom, 1/4 cup ricotta, the lite mozzarella. Like a layered lasagna minus noodles. The best lite shredded Mozzarella is trader Joe's, it actually melts.

Egg roll in a bowl - brown chop meat of choice- turkey/beef/chicken- I add shredded slaw mix, pre-shredded carrots and then asian seasonings- for me that is Coconut amino acids (less sodium than soy sauce), drizzle toasted sesame oil, jarred crushed garlic and jarred crushed ginger...and maybe siracha. easy peasy.

Egg Salad can be done with cottage cheese as the binder- I know it sounds weird but it works, because eggs are white and lumpy too. Try trader Joe's Everything but the bagel spice on top. So good. Very good on Wasa cracker.

Chicken Salad- you can do as Buffalo chicken salad- I use fage greek yogurt (very thick), Ken's buffalo sauce, a little bit of ken's lite blue cheese dressing and celery and onion.

I use to have variety of choices. Since you can only reheat at work, I can suggest you something.

Baked chicken 4 oz, steamed broccoli 3 oz, steamed baby carrots 3 oz and 3 oz kale. You can use this(12 oz/ 9 oz / 9 oz /9 oz) for 3 lunch servings, if you cook once and save in your fridge. You just need to microwave at your work place.

I use a thermos to take high protein chili and soups or I will bring soup in a thermos and add unflavored protein before I eat. It definitely helps to mix it up!

I cannot reheat at work nor do I have access to a fridge - my lunch has to be in my lunch box with a cooler pack. So most days, I do about 1.5 cups of mixed green salad, 2 tablespoons of dressing and four ounces of chicken (usually those Perdue strips). I also pack a morning snack (carton of yogurt) and an afternoon snack (2 ounces of cheddar or other hard cheese).

You could put your chicken salad on the greens.
