Muffin flop

i found a banana protein muffin recipe. Bananas, peanut butter, eggs, protein powder, vanilla, honey and baking powder. I did not cook them long enough and they are like mushy cookie dough. I have put them back in the oven but not holding my breath. Anyone have any good easy breakfast ideas. I am stuck on protein drinks for breakfast and getting bored. 8 months post op

that stinks, they sounded intriguing. I'm still on shakes for the most part too for breakfast. The odd time I make an omelette.

Oh darn that they didn't turn out. Breakfast is such a difficult meal.

I have seen some muffin tin egg bakes that can be frozen. They are single serve. I'll have to find the recipe. They looked really good, easy to make, and easy to reheat.

Hoping others have recipes to share too. :)

Check out "the world according to Eggface" website. She had WLS and has loads of breakfast recipes.

Hi Leeann,

They probably flopped because there is no flour in them. I wonder what you could add instead of flour? (I'm not eating any wheat at the moment so your post intrigued me. Too bad they didn't turn out). There must be a good recipe somewhere. I think I will check out cc's suggestion...

Our homes (mine and my sis) are gluten free, so we don't use flour at all... we bake instead with a lot of coconut or almond flour, among others.

Against All Grain is my favourite cookbook, or really anything by Danielle Walker. Her recipes are amazing and paleo, so gluten free, high protein.

My nephew has celiac disease, so we keep our homes gluten free to keep safe environments for him. :)

Nope. I allergy. I was just looking for a recipe that did not have flour. I try to avoid white flour if I can. Just out of preference
