    ....how many of you have read this book and what do  you think about it?  My DH and I are doing the gluten free eating and I think it is making a difference...epecially in him.

    Hi Marti....I haven't read the book but my daughter is on a gluten free diet. She has Barrett"s Esophagus (Celiac Disease) and can't have even a smidgen of wheat. When I lived there this last year we all ate pretty much gluten free. I could tell a difference. I didn't have any stomach problems and other then being tired from running after a 5 year old all day I felt pretty good. My Irritable Bowel Syndrome didn't bother me at all.
    I am pretty much following the gluten free diet now that I have returned to MN. It is healthier for sure!! I would definitely recommend it to anyone.

    Connie:

    I have Barrett's and that doesn't necessarily mean Celiac Disease. Barrett's has to do with the acid from your stomach coming back up into your esophagus and changing the cells to precancerous; celiac is a gluten intolerant condition. That may have helped your IBS not having any gluten.

    Have you tried the Quest bars? They are gluten free and very good.

    You are r ight Eileen, but he says only about 1% of the population has celiac , but there are two other conditions that affect many more people, IBS and Acid reflux [or reflux esophigitis]
     
    He calls these two conditions, Celiac disease "lite". He says while it has not been documented well, he believes that he has seen many of his patients with complete or partial relief from symptoms of IBS and acid reflux with gluten removal.

    I think youae very smart to go GF especially with your IBS [see my note to Eileen]

    My Mother ended up losing the majority of her bowel and lived with a colostomy for 15 years. I could not convince her to remember not to eat whole wheat bread and salads, she still kept eating a high fiber diet....she eventually died and on her Death Certificate cause of death was listed as "Failure to Thrive"  ..which was amazing as my Mother had been a very health conscious person all her life. Old habits die hard.

    Marti...I know what you mean about the "fog has lifted". It has been easier for me to remain on this diet of no wheat as I do feel healthier and not so bogged down.
    I still eat salads sometimes but gluten free dressings. There are some really good ones out there.

    My husband and I go as wheat free as we can or at least cut down the processed wheat.  I can tell the difference in my energy.

    I know that after about 10 days of gluten free eating, I had the fog lift around my brain.

    This doctor that wrote this book says that our bodis cannot digest wheat, it has no idea what to do with it. There hae beebn research studies that have shown DNA changes in our bodies when we a Wheat.

    The wheat we eat today is absolutely nothing like the wheat of even 50 years ago. It has been manipulated so much by the big corporations growing it. They have genectically changed the seeds to produce more wheat. I read somewhere that there are not really any amber waves of gain anymore, the wheat is stick straight and about 18 inches high. I don't know if this is true, do any of you. There are no wheat fields around Madison that I have seen.

    The other amazing thing is that the wheat stimulates the production of glucose. He feels that most of the diabetes running rampat today is from Wheat....and he tells us "it is not our fault."

    Very interesting, I think as I was a SEVERE diabetic on 1500 calories a day and working out 5 days a week, I was gaining 2 pounds a wek and on over 200 units of insulin a day....talk about a mess. My GBP surgery cured me inthe hospital.

    Hi Marti,

       I am absolutely clueless about this GF stuff. I grew up on whole wheat. Mom baked everything from scratch back then. I never heard of GF until this past year. My surgeon wants me to eat only whole wheat pastas and breads.  No white flour. It all sounds too confusing to me.   Mag

    I agree it is very confusing. But the Wheat your Mom used is nothing like the Wheat avaiable to us today. It has all been changed, just like so many other food products on the market. Like Soy beans for example. My Wellness doctor told me not to eat soy beans and soy bean products as they have been  genetically changed... so much that they are no longer good for us.

    Big Business has changed everything is tghe farm communities. They dictate what crops are sown and with what seed. They have contracts with chicken Farmers and if the farmers do not agree to use the Big Business's altered feed, they will not deliver new chicks for them to raise and sell. The new feed is almost force fed to the chicks so they get to be 4 pounds faster. The chickens probably never see the light of day.

    That is why I only use free range chickens and cage free eggs. Those chickens are pastured and are put out in grass and eat bugs and grubs and frequently they are pastured where animals have been healthier. Much more natural.

    I told my husband eggs are not where I want to save money at the grocery store.

    Believe me they have changed our Wheat and it is affecting all of us. Because it is so cheap it is in lot's of other foods. My Wellness doctor told me to try to eat a lot of things that don't need a label.

    Hello Marti!

    I've been enjoying your posts this week.  It's nice to meet you.

    I'm really interested in the GF diet as it corrolates with diabetes.  My husband was diagnosed with diabetes 2 a few years ago, and we were so surprised.  Now I'm wondering if it might have something to do with all the whole wheat we eat.  I will definitely be looking into this area.  In the meantime, he says he is game to try the GF diet.  Thanks for bringing this info to us!

    Thanks Vicky...The thing about wheat an diabetes is that Wheat produces high blood sugar levels. The doctor says that eating two slices of Whole Whea bread is often worse than drinking a can of sugar sweetened soda ore eating a sugary candy bar. In fact the glycemic index of a Snickers bar is far better than whole grain bread.

    It is no wonder we all have problems with diabetes. In fact he says in the book "Wheat Belly" that  Wheat products elevate the blood sugar levels more than virtually any other carbohydtate!

    The higher the Blood Sugar level is after consumption of food, the greater the insulin level, the more fat is deposited, particularly abdominal and deep visceral fat.

    It is pretty scary what has been going on and it is not our fault.

    I find this topic highly informative.  I have been reading a little information on it.  Right now, I cannot even eat gluten free things because of the high calories or high carbs.  Has anyone read about the Primal or Paleo diet and philosophy?  I noticed they use coconut or almond flour.

    But have you noticed gluten free has high calories or carbs sometimes?  How many carbs and calories do you try to stay within each day?

    Ideally around 1000 to 1200 calories....but I always blow it with my wine...my big weakness.I am working on it, but not unusual for me to drink a bottle in the evening. which is another 500 calories. As far as gluten free goes, I eat so little bread etc...that I never really noticed it being high in calories, but then my bread doesn't come with calories on it. I buy it fresh at a local bakery. I will need to look into that. Marti

    Wow, lucky you for having a bakery that is a good one.  Where I live we have a bakery called Bread and Cie.  But I don't eat that right now.  Wine is great, it is a food really.  I used to consider myself somewhat of a connoisseur but I was diagnosed with type 2 diabetes last  January and even though I've lost 30 something pounds I am still not in the normal blood sugar range.  So, I look forward to wine when I am at a normal weight.
