Post Date: 2/5/12 3:15 pm This is my first attempt at gluten free cornbread, and I thought it turned out pretty good. I would like to experiment using other alternative flours, but almond flour was what I had on hand today, so I used that. The texture was fine. It didn't rise as high as my usual cornbread, but duh! it's gluten free! LOL!
Gluten Free Cornbread
1 c yellow cornmeal
1/2 c almond flour
1 tsp salt
1/2 tsp baking soda
1 TB baking powder
1 egg
1 c. buttermilk
2-3 TB bacon drippings, melted
Preheat oven to 400 degrees. In 8" cast iron skillet, melt bacon drippings and have pan really hot before you pour the batter in.
Mix together all ingredients into a smooth batter. Pour into hot prepared pan or skillet. Bake 20 minutes or until done in the center.
