Isomalt Peach Ice Cream

I just tried Isomalt for the first time. No stomach distress!! This is really a wonderful Ice Cream. When you freeze it, it gets alittle harder, but not rock hard.

Isomalt Peach Ice Cream

1/2 cup isomalt
1/4 tsp salt
1/2 tsp xanthan gum

2 tbs water
1/2 cup + 2 tbs half/half
1/2 cup sugar free peach syrup

1/2 tsp pure vanilla extract
1 1/2 cups half/half

cup chopped fresh or frozen peaches
2 tbs sugar free peach syrup

Combine isomalt, salt and xanthan gum. Set aside.

Combine chopped peaches and sugar free syrup.

Combine water, 1/2 cup + 2 T. half/half, and sugar free syrup. Heat mixture in a saucepan until bubbles start to form.

Remove from heat and stir the isomalt mixture in with a whis****il dissolved.
Then stir in the 1 1/2 cups half/half and vanilla extract.

Refrigerate at least 1 hour.

When chilled, pour into ice cream freezer bowl, turn the machine ON and let mix util mixture thickens, about 20-30 minutes. When very thick, add peaches.
