With the cooler weather fast approaching I wanted to start gathering healthy crockpot recipes for my family to enjoy. If you have any delicious crockpot recipes please share them here. Also if you have any websites that have healthy bariatric friendly recipes please post them here as well!

Crockpot Mexican Chicken (for a family of 4-6)

5 boneless/skinless chicken breasts
1 package of FF cream cheese
1 jar of salsa
1 package of taco seasoning
1 can Chili Beans

**Put some salsa a the bottom of the crockpot, put 2 breasts down and sprinkle the taco seasoning on them (repeat for the rest of the layers of chicken).  Soften the cream cheese and stir it with the remaining salso and pour over the chicken.  Then put the Chili beans on top.  Cook on HIGH for 3-4 hours (for an 8 hour day, cook on low).  You can stir as you like.  Serve over rice.  (or just eat as is if you can't do carbs)

Slow Cooker Chicken w/ italian cream cheese sauce (made that title up lol)

2 lbs. boneless chicken tenders (not cooked)
1/4 c Buffalo Chicken Wing Sauce
1/2 c Italian dressing (Light or FF)
1 green bell pepper (sliced)
1 small onion (sliced)
1/2 tbsp seasoned salt (optional)
1 block of FF cream cheese

Put everything into the crock pot EXCEPT for the cream cheese.  Cook on LOW for 6-8 hours. ADD the cream cheese and cook on HIGH for 30-45 more minutes stiring every 15 minutes.  VIOLA!

This recipe is my new favorite and it is so easy!

McCormick's
White Chicken Chili
1 pkg. McCormick's White Chicken Chili Seasoning Mix
1 Tbsp. oil
1 lb. chicken breasts, cut into cubes
1 cup water
1 can white beans, undrained

You are suppose to heat oil and cook chicken 3-5 min until no longer pink. I used my slow cooker to cook the chicken with 1/2 cup of salsa and then I shred it. I find it more tender this way. But either way is fine!
Stir in seasoning mix, water and beans. Bring to a boil; cover. Reduce heat and simmer 10 mins, stirring occasionally. With the slow cooker, I add the mix water and beans about an hour before I plan to serve.

Top with cheese, salsa, FF sour cream, avacodo...

Pulled Pork

Ingredients

  • 4 lbs pork roast (shoulder or butt)
  • 2 large onions
  • 1 cup ginger ale
  • 1 (18 ounce) bottle favorite barbecue sauce (I like Sweet Baby Ray's)
  • barbecue sauce, for serving (optional)

Directions

  1. Slice one onion and place in crock pot.
  2. Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours.
  3. Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
  4. Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
  5. Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.
  6. TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.
  7. Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.
  8. Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need.

I  use my crockpot twice a week at least. These are my two favorite recipes:

2-4 bonelss skinless chicken breasts
salsa
package of fajita mix
can of corn
can of black beans
cover the bottom of the crockpot with salsa, add chicken breasts, dump the fajita mix on them followed by salsa, corn and the beans. coo****il the chicken is tender. serve topped with reduced fat cheddar cheese for some extra protein yum!

chicken breasts
1 package powdered italian dressing mix
can of chicken broth
can of spinach
add dressing mix to chicken broth in crockpot, put in chicken top with spinach
