    very dry cake

    Okay, so I made my cake with diet pepsi. (all I had) taste good, but dry..should I have addeddsomething? I also found some low sugar frosting (Pilsberry). Lucky

    Hi, I'm an italian nutritionist. I'm sorry but I can't help you with the cake, but I can give you a good (and light) mediterranen recipe.

    Zucchini & ricotta pasta
    For 4 persons:
    Pasta short type (eg, rigatoni, fusilli, macaroni): 320g
    Ricotta cheese cow: 125g
    Parmesan or grana: 60g
    2 large zucchini
    Extra virgin olive oil 2 tablespoons

    Boil water and salt it. Cut the zucchini into thin slices and throw them into boiling water with pasta.
    Meanwhile, in a non-stick pan, melt the ricotta, mixed with the parmesan, adding some 'of the pasta cooking water, until creamy.
    Drain the pasta and zucchini, skip everything in the pan with the
    cream cheese, adding the oil.

    Nutritional information per serving:
    calories: 439
    Protein: 16.38 g (14.91%)
    fat: 8.64 g (27.15%)
    Carbohydrates: 67.95 g (58%)


    If you add a serving of vegetables seasoned with a teaspoon of oil are about the calories of the meal. If you want, is very well without adding oil. This will save about 45 calories per serving

    Was this a cake that ordinarily uses Regular Pepsi and you substituted Diet?

    Sugar is hydroscopic and most sugar subsitiutes are not.  This would mean the batter could not hold on to the water during baking.

    Was the cake overcooked?  If the internal temperature of the cake gets over boiling, the water will escape as steam.
