I have a subscription to "Low-Carb Lifestyle for January/February. It has a whole section on low-carb crockpot meals. On page 90 is the first recipe I'm going to try -- '90's style low cooker coq au vin. 2 packages Butterball Boneless Skinless Chicken Breast Fillets 1 pound fresh mushroooms, slicked thick 1 jar (15 ounces) pearl onions, drained 1/2 cup dry white wine 1 teaspoon thyme leaves 1 bay leaf 1 cup chicken broth 1/3 cup flour 1/2 cup chopped fresh parsley Place chicken, mushrooms, onions, wine, thyme, and bay leaf in slow cooker. Combine chicken broth and flour; our into slow cooker. Cover and cook 5 hours on low setting. Add parsley. Serve over wild rice pilar, if desired. Note: Remove and discard bay leaf before serving dish. Per serving: 180 cal; 23g pro, 15g carbs, 1g fiber, 1 g fat,

A family favorite was to dice up some potatos, carrots celery, onion (purple), can of peas, pound of hamburger (turkey or veal), and a can of tomato soup and can of water and seasoning and throw it in the crockpot...yummy at the end of the day...usually we cooked it 8 hours on low.' Peggy
