Your best Low Carb/High Protein Omelette Recipe
I am truly fond of using Eggbeaters for omelettes... not only good protein, low fat and low calories, but delicious, too. For my current favorite, I sautee an onion (and sometimes mushroom, too!) in some butter until very dark, gooey and carmelized. I start the omelette (for me, I use about 1/2 a cup of Eggbeaters) and let it begin to set (but not brown). I then flip the omelette (it's an art!) and add the carmelized onions along with smoked provolone to one half of the omelette... then let it slide out of the pan and fold over onto the plate.
It's so good... there's something about carmelized onions that makes me totally drool! :)
