Calling All Chili Cooks!

My sister is hosting a Chili Cook Off this weekend in honor of her birthday and I'm really looking forward to it. Chili, in general, seems like it is pretty WLS-friendly so that's awesome. I'm looking for a really delicious and unique recipe to take. Any suggestions? Obviously WLS-friendly, but not just run of the mill either.

Thank you! Thank you!

It is likely that everyone else will do a traditional type chili.  If you want unique, make a white bean, chicken chili. I don't have a specific recipe but if you google there are tons of different ones to choose from.

1 pound browned hamburger, 1 can Manwich sloppy joe sauce, 1 can drained kidney beans, 1 tablespoon chili powder. Boom, chili.

Hi Anny

I was just on theworldaccordingtoeggface and she had several chili recipes. You probably already looked there though.

I was wondering if I could get the Brownie  Zuchini recipe

Thanks

Hey Bubbles, somehow I hadn't thought to look on Eggface, duh!

Here's the link for the Flourless Chocolate Chip Zucchini Brownies. They've been a HUGE hit for me!

I had a recipe for white chicken chili and its SO good. But it does have sour cream in it so maybe substitute in plain greek yogurt? It has green chilis in it and white beans, chicken, etc. Let me know if you want me to dig it out for you.

Hi Bublegirl1

That sounds so good, I would like the recipe.  I can eat puree food now and everyone says chili is a good thing to puree

Here is one of my favorites:

Vegetarian White Chili

2 bags Morningstar Farms fake chicken, cut into small pieces
one onion, diced
one red bell pepper, diced
one can (4 oz) diced green chilies
one cup salsa (I use medium but you can use hot if you prefer; I just buy the store brand)
three cans vegetable broth
three cans Great Northern beans
one tablespoon minced garlic
cumin
garlic powder
onion powder

In a big pot, sauté the garlic, onion and diced red pepper in a little olive oil until slightly soft.  Add the chicken and sprinkle liberally with cumin, garlic powder, and onion powder.  Stir and cook for a couple minutes.  Add the broth, beans, green chilies and salsa.  Stir.  Add ½ teaspoon of cumin, ¼ teaspoon of onion powder and ¼ teaspoon of garlic powder (or more if you want it spicier).  Stir.  Bring to a boil.  Reduce heat and simmer for about 40 minutes.
