Texas Caviar?

Hey everyone, I am looking ahead a week or two at some dinner options for my family that I can also eat with them. For years I couldn't eat dinner with the family because the band was so tight, so I am excited to eat with them. I will be able to have beans at that time so I thought I might make Texas Caviar (bean salad) one night since they all love it. I make mine with a few kinds of beans like chickpeas, navy beans and black eyed peas, plus some super diced onion and tomato, some diced avocado and usually soak in oil and vinegar or Italian dressing overnight that I then drain and add cilantro and lime juice. If I use a low fat low sugar dressing, it seems like it may be a great protein option with all the beans. I just don't want to make a mistake. Thoughts?
Sounds delicious! While beans have protein, realize too they are a carb as well. So if you are watching your carbs too, don't over due it. Enjoy!
