I keep reading about everyone eating this Egg salad and would love the recipe! I tried searching first, I promise :)

Emiepie here! I use one boiled egg, 1/4 c cottage cheese, ma**** up with seasoning (salt/pepper or everything but the bagel seasoning from Trader Joe's) and crumbled bacon if I have some made. You can pretty much add anything you like-relish, celery or anything like that. Basically sub in the cottage cheese for the mayo. Hope you enjoy!

I tried it with a 1/4 t. of pesto, too. Deeeelish!

This has allowed me to start eating egg salad again. I love it, but after purees, I never felt like I could A) eat enough eggs to get the protein I needed and B) get it creamy/wet enough with the amount of mayo that would be acceptable calorie-wise. It tastes so good! I add yellow mustard and Trader Joe's Everything Bagel Spice. In the future, I may try egg and olive, as I have a new found love for olives!

Thanks for the idea. I plan to use my favorite seasoning for eggs----paprika.

I am going to do this. I have also been contemplating sub-ing tzaki for the mayo in deviled eggs.

I really like the taste and texture of real mayo BUT in my struggle to get this regain off, I have to ask myself "What is mayo doing for me" Cottage cheese provides a good kick of protein (body builders eat it for a recovery meal after lifting soo...).
