I will be making Vietnamese Spring Rolls tomorrow using rice paper filled with shrimp, fine strips of zucchini and carrots, cilantro, mint, and lettuce.  I'm not sure about an appropriate dipping sauce.  Does anyone have any suggestions?

Oh, I LOVE spring rolls and have enjoyed them a few time since surgery. Look online for a recipe and try to sub out PB2 for any peanut product? That's a tough one.

I love the PB2 peanut sauce in this recipe- if you want a peanut sauce, try it.

 Yummy!  I am visiting TJ this week end.  It's tough to find a sauce that isn't loaded up on sugar, salt, or carbs.  But I thought I'd check out TJs and Fresh & Easy.  Thanks for your response.

- Ponzu (basicly Soy Sauce and Lemon) could add wasabi or Colemans Mustard (Chinese hot mustard)

- Greeks yogurt with Sriracha....dash of Splenda to cut the tart of the GY.

- Soy Sauce mixed with Hoisin and Sesame seeds ......maybe add a little water to thin it down a little.....

- Soy Sauce with Rice Wine Vinegar...ground ginger ...chopped scallions, sesame seeds

I'll add if I think of more....

looking for more of a Thai....spicy peanut sauce?  basic recipe.....couple TBSP's crunchy PB...3 TBSP's..light soy.....hot sauce or chili oil....bit of splenda or truvia to sweeten......mix well....I like it with a dash..1/2 tsp roasted sesame oil!  Or more a pot sticker vinegar soy sauce?  2 TBSP  hoisin or plum sauce .....3 TBSP light soy or ponzu.... I also like hot chili oil 2 tsp..... 2  TBSP seasoned rice vinegar......2 tsp worcestershire sauce.......1tsp roasted sesame oil.....if too tart.....add splenda or truvia to taste  these are two of my "go to" Asian dipping sauces...I usually have the ingredients on hand....you may need to buy some...but the ingredients last awhile in the fridge!

 Check out Walden Farms products. They have sauces, dressing, dips, ketchup, mayo, and a lot more with 0 calories, 0 carbs, 0 everything. I've only tried their Thousand Islands and Bacon Ranch dressings, and I like them both. A few retailers here in the DFW area carry them as well. Their website will tell you who carries them or you can order online.

So excited...how many would you be able to eat I do realize everyone is different but I am looking into this and it states to fry :( but if i have an idea how many everyone else is eating I will not feel as bad :)

 The ones I am making are the Cold Vietnamese Spring Rolls, NOT the fried version.  In fact, except for the meat I use, in this case shimp, everything is fresh and uncooked. Rice paper is my choice to roll the shimp and veggies in, but I know others sometime use lettuce as wraps.  I will be able to eat one Spring Roll, but my family members will probably eat 4-6 a meal.  As long as I'm sensible about the dipping sauce and I get my protein in for the day this will be a nice tasty cruch meal for me.

I know it's too late to help today but for future use, I make a tasty sweet and sour sauce by using equal parts ketchup, vinegar and splenda mixed together. If you want it thinner just add some water. I try to keep it already made and on hand but only takes a second to mix if I run out.
