Turkey Bacon

I can begin eating regular foods on Tuesday. I would like to have a piece or 2 of turkey bacon some days. How do you cook it without having the remaining bacon go bad? There are like 9 servings in a pack and it will go bad before I eat it all.

Do you cook all of it at once and then refreeze it after it is cooked? I think I am going to thaw it and cook it in my air cooker. Then when it is cool, put 2 strips each in snack sized ziploc bags and refreeze some of it. Do you think it can be refrozen?

I would freeze it in portions while it's still uncooked.  I think that would work better.

I cook up a couple packages at a time and freeze the cooked strips in a baggie, then warm them up in the oven with whatever else I'm warming for breakfast. I do the same with turkey or chicken breakfast sausages. The bacon can also be crumbled up into salads for some extra protein and flavor.

Take it easy on the bacon this early out.  Focus on moist juicy meats for a week or so before going for harsher textures.
