Easy Crock Pot Pulled Pork

My first try with this easy recipe was a home run. I put a pork roast in the crock pot before going to bed, poured over it 2 cans of regular root beer (not diet, the instructions were specific about that) and turned out on low for 10 hours. The recipe said one can of soda but I was afraid to burn the house down. Next time I'll use one can because there wasa lot of liquid.
In the morning, I reset the crock pot for 10 more hours on low. A half an hour before dinner time, I drained the liquid, pulled the pork apart with two forks and added a bottle of barbecue sauce, stirred and cooked for a half an hour. The family ate theirs on hamburger buns, I had mine on a plate. Everyone loved it and there's lots of leftovers.

No I used regular barbecue sauce but using sugar free would be better for us. The recipe only specified using regular not sugar-free soda for the cooking.
This seems fairly high in sugar! But you could easily braise pork in the slow cooker with healthier things :D

I was thinking that too, Gwen. Carbonated soda with sugar and BBQ sauce with sugar would not be something I would consider at this point while I'm in weight loss mode.

The soda is poured out with the fat after it is cooked and before the barbecue sauce is mixed in.

Ingredients- 7 lbs. pork shoulder roast
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 cans natural stevia-sweetened root beer
- 2 cups (500mL) gluten-free barbecue sauce
- Remove the twine from the shoulder roast and place in your slow cooker.
- Sprinkle the roast with paprika, garlic powder and onion powder.
- Pour the root beer along the side of the pork.
- Cover and cook, on low, for 9 hours.
- Drain the juices from the slow cooker, return the meat back to the slow cooker, shred with a fork.
- Stir in barbecue sauce and cook on low for 1 hour.
- Serve with a roasted sweet potato and veggies or a gluten-free wrap, bun or bread.
Barbecue Sauce: Any barbecue sauce would do the trick. I used a honey-sweetened (local) barbecue sauce. You can also make your own using this sugar-free barbecue sauce recipe.
Pork vs. Beef: to make this recipe leaner, swap out the pork for a sirloin roast. You can keep all of the ingredients the same except you'll need 4 cans of root beer and you'll need to cook on low for 12 hours instead.
