Frisco- Meatball Caprese !!!

Made this last night for some friends.....they loved it !!!

Basically Caprese over Italian meatball formed to a patty vs. a ball !!!

That looks nice, but it is a meatball sub without the roll. 

Caprese is a vegetable insalata. It's supposed to look like the Italian flag. Red, green and white. 

But it does look good.

Excellent recipe makeover.  I was introduced to pizza stuffed chicken breast today...opened up a flood of tasty ideas for me.

Often at Italian joints I will just order a meatball sub and toss the bun. This is much more elegant.
