Whatcha Eating Today VSGers? Friday

Happy Friday everyone!  I'm so glad it is Friday.  This week was my first week back at school and I'm exhausted.  This weekend we are camping with my son's cub scout pack.  It should be fun!  Then, our 12th wedding anniversary is on Sunday.  Hopefully we can relax a bit. :)

B: protein bar.  I don't typically eat protein bars, but I saw these on a different forum and thought I would give them a try. http://www.julianbakery.com/paleo-protein-bars/  They aren't horrible and they have LOTS of fiber (which is also a carb, I know, but I don't really eat vegetables, so fiber is important for me)

S: white cheddar popcorn. (My son is selling Boy Scout popcorn and it sounded yummy.)

L: Mexican...I get a plate of pork, beef and a chili relleno (not fried) and it is pretty delicious.  I can usually make it last 3 meals unless someone else helps me eat it.

D: We'll be camping with the cub scouts...they are having spaghetti, I'll probably just take some lunch meat or just eat the sauce without the noodles.

S: then I'm sure I'll eat a s'more.  Only one though.

V: on track

W: doing AWESOME today with water.

TGIF!  Its been a long week.

Breakast - salmon

Lunch - phily cheese steak sloppy joes

Lunch2 - Mongolian meatballs

Dinner - thai chicken thighs in peanut sauce

vitamins - on track

water - good

exercise - recumbent bike, reluctantly... Its been a long week.

Long day at work! One day off which is tomorrow, so I think I'm going to study on the beach if it's nice out. I haven't been into a pool or on the beach once this summer!

B: 32oz iced coffee with syntrax protein and cream, cheese stick

B2: two hard boiled eggs

L: salad with roasted veggies, feta, cheddar, flax seeds, pepperoni, grilled chicken, and 1/2 packet of creamy French

S: pork rinds

D: leftover Brazilian meat, maybe 1/2 protein shake to keep the sweet cravings at bay

W: counting the coffee, about 100oz

V: good

E: 9hr nursing shift on a busy unit

This has been a ****ty, ****ty week.  

1: frankenshake
2: snacks in the car - two bottles of tea, 1 serving peanut M&Ms, beef jerky
3: THREE EARS OF CORN!!  (This is my one fresh local corn on the cob meal of the year.  Suck it.)  

liquid and vites: on track
exercise: 60 minutes yoga (15 min morning stretches for back pain, 30 min intermediate stretches for runners, 15 min twist & align for back pain), 40 minutes physical therapy for hip

Corn on the cob is good for you! There's only about 1/2 cup of corn on the average cob. I've been eating 1-2 cobs a week during the sweet corn season. I usually cut the cob in half, so that's about 1/4 cup corn per meal. Plenty of room for the protein.

BTW, if you don't know this already, the easiest way to make corn on the cob is in the microwave. Here's how: Place the whole cob in the microwave. Put it in the way you bought it -- husks, silk and all. Microwave on high for 4 minutes. Using oven mitts, take cob out of the microwave. With a sharp knife, cut off the base of the cob (the stalk end, not the silk end). Then make a vertical cut along the cob, cutting through the husks and into the corn kernels. Then grasp the top of the cob (with the mitt!), firmly holding onto the husks and silk, and shake the cob. It will slide right out of the husk and onto your plate, completely clean and free of silk, and perfectly cooked. The unwanted parts stay in your oven mitt and can be discarded immediately. I eat my corn plain, no butter or salt. It's perfect just as it is.

B: Scrambled egg, smoked salmon

L: Smoked salmon, wedge cantaloupe

D: Taco salad (black beans, mexican cheese, diced fresh tomatoes, salsa)

S: Black, unsweetened coffee with my peach-flavored vitamin gummies. Yum!

W&V: Done

E: Nada. Still sick w/sinus infection and bronchitis. Seeing my doctor Monday.
