It's my new favorite "snack." I met with my nutritionist today and we discussed beef jerky....she's in favor of it. I never liked it before, but now all of a sudden it's my fave. I've been making my own because that way I know exactly what's in it and for sure what is not in it.....no sugar or other junk.

I've been keeping it simple - I sprinkle it with some Montreal Steak seasoning and then dehydrate. Does anyone have some great recipes they'd like to share? I don't care for smoked or BBQ flavor but I do like mildly spicy. I found a recipe for salmon jerky that I'm going to try next week.

I wish I liked jerky. Maybe I should try to make my own. If you haven't already, post the recipe that you have.

I keep it very simple.....last year I got one of those NuWave ovens and I love it. I use thin strips of beef (like 1/4"), sprinkle it with Montreal Steak seasoning and then dehydrate at 175 degrees for a little over 2 hours. I've heard that the meat will keep for 2 weeks in the fridge, but it doesn't last that long around here. I'm looking for additional recipes too.

When I spoke with my nutritionist yesterday, she was very much in favor of it as it's a wonderful source of protein, provides lots of chewiness and staves off a desire to munch on something that is on the no-no list.

Next week I'm going to try the recipe I go for salmon jerky.

Jerky is fantastic, especially if you make it yourself.  Store bought jerky has a ton of sodium so nice job making your own.  I do buy OS Trim habanero beef/elk jerky from Amazon.  it is low in fat, low in carbs, high in protein and is not greasy like a Slim Jim.  If you get tired of making it or want to try something different I would recommend searching OS Trim on Amazon.

I just got some samples from them and really liked the flavors so far.. Oddly enough, that is the one flavor I have not tried yet (my last sample) so I am now REALLY looking forward to that one!

I buy Ralph's beef jerky made here in Oklahoma (you can order if from them as well). It has less than 1 gram of carbs per serving, so the sugar is very low compared to national brands like Jack Link (I can't eat that anymore, ick!). This jerky is VERY THIN and VERY DRY... so it's like it re-hydrates in my mouth! LOL Which is perfect for me because it lasts longer.

If I were to make my own (which I intend to do) I would probably marinate it in a blend of soy sauce, Worcestershire sauce, and a multitude of spices before I dried it. That's probably the base of seasoning that most companies use (they add brown sugar as well).

 

*Edited to add that I intentionally left off the liquid smoke that a lot of places use. I'm not a huge fan of that stuff either, and a TEENY bit goes a LONG way imho*

Great idea, sound awesome!  I have a dehydrator that I haven't used in years.  When I am to the point of eating solids I look forward to trying.  I am 11 days post op.

I make beef and turkey jerky in a dehydrator. I bought jerky seasoning from the store and marinade the meat overnight in worcestershire sauce & that seasoning. I don't like it too salty so this combo is perfect. I'm going to do some teriyaki next.
