What are some of your favorite ways to eat chicken? I am running out of ideas for ways to season it and marinate.

Also is it okay to eat like hamburger or steaks at 6 weeks post op?

I tried pork tenderloin and it was tolerable.

I'm not a big chicken fan so we are eating a ton of ground turkey. My surgeon does not allow pork or beef until 2 months.

This is one of my favorite chicken recipes and very easy~

Butter Chicken

  • 1.75 cup, Unsweetened Almond Milk
  • 3 tbsp, Tomato Paste
  • 2 tbsp(s), Garlic, raw
  • 3 tsp(s), Spices, turmeric, ground
  • 2 tsp, Spices, ginger, ground
  • 2 teaspoon, Sea Salt
  • 1.50 tsp, Spices, chili powder
  • 1 Tsp, Cinnamon
  • 28 ounce, Raw Chicken Thigh, No Skin, No Bone
  • 10 second spray, No Stick Vegetable Cooking Spray (or 1 tsp olive or coconut oil - calories below reflect spray - adjust if necessary)
  • 1.50 medium (2-1/2" dia), Onions, raw
  1. Cut the chicken up into bite sized chunks and generously coat them in the turmeric, ginger, salt, chili powder and cinnamon. Set aside in a bowl.
  2. Dice the onion and garlic. Heat a skillet to medium heat and oil or spray. Add garlic and onion to the pan. Cook for 2-3 minutes until the onions are translucent and fragrant.
  3. Increase the pan heat to medium-high and add the chicken. Cook it almost entirely through - the outside should be white and this will take about 3-5 minutes.
  4. Once the chicken looks almost fully cooked add in the almond milk and tomato paste. Using a spatula mix in the tomato paste so it runs smooth through the almond milk. It should be an orange color at this point. Turn the heat to medium-low and cover with a lid for 5-7 minutes.
  5. Remove lid and combine. The chicken is fully cooked and you should be able to eat it. However, if you like a thicker curry sauce allow it to reduce with the lid off until it reaches the consistency you like.
  6. Serve with low carb naan or over cauliflower rice or all by itself. Enjoy! Divide into 8 servings: Calories: 158 Fat: 5 grams Carbs: 8 grams Fiber: 3 grams Protein: 21 grams

I was inspired by this last night, but had steak strips out for dinner, so I did it with the steak. I must say that it was delicious!

I'm going to try steak, that combo never occurred to me! Hmmm... I wonder if I could do the same with cod? .

Chicken thighs worked much better for me post-op than chicken breasts. I love curry. :)

I was allowed to eat any meat at 6 weeks - some people have trouble with ground meats, I never did. I've also never had an issue with steak but I make sure to go with tender and/or fatty cuts of meat.

For me the important thing was cooking things properly so they weren't dry. Dry meat = bad.

I have a weird phobia of eating chicken with bone in it. LOL been that way since I was a teen.

I like rotisserie chicken though! I'm just trying to find ways people make chicken and what not. :)
