I've been eating Ketogenic for 18 months, and I finally got around to meal prepping, because I've exhausted my easy, grab and go options and got bored! LOL I got a multicooker (Instant Pot type) on Prime Day at Amazon (also got a sous vide!) and today is the first day I actually used it! Chicken thighs with either mixed greens or green beans, and 1/2 tbsp yummy Kerrygold butter! Also ended up with a couple of great containers of tasty chicken broth, too!

I had to order my containers from Amazon (12 oz - 1.5 cups) because the smallest ones I could find locally were 26-30 oz! LOL

*Greens and green beans are canned

That looks delicious! I do meal planning, but haven't ventured into the full prepping yet. Kudos for diving in!

THanks, Mersh! I'm officially a convert--so nice to have a hot home-cooked meal, especially now that the weather is getting colder. Tomorrow--breakfast muffins meal prep!!
