Post Date: 2/3/12 7:34 am I honestly do not count the carbs in green leafy veggies, and some that are mainly water. (like cucumbers). So anything like celery, lettuce, cabbage, broccoli, any dark greens - like kale - the carbs will not really affect anything. (except the gas). But things that are starchy - anything starchy - I am very careful with. BTW: tomato and onions have a lot of sugar. So be careful with that.
When I am losing weight - I do try to limit any starchy - or with sugar veggies - fruits, and limit my fruits to some that have lots of fiber... and are known not to affect my blood sugar: mainly - berries.
But things like potatoes, rice, grains, oatmeal, bread, bananas, melons, grapes, etc. are on my no-no list. They either have too many sugars - or they turn into sugar the moment you start chewing them. (enzymes in saliva).
I do get a lot of veggies, some (1-2 serving fruits) and so on.
My body is supper sensitive to carbs - some people are - some not so much. I developed reactive Hypoglycemia after RNY (was not diabetic before) and mu body makes too much insulin when I eat carbs that are sugar or turn into sugar. Too much insulin will make us store fat and prevent burning fat...
by trial and errors - I found out which food affects my blood sugar and try to stay away from it or really limit that, and even if I have any - I make sure I have that with proteins and fat.
