This is awesome! I have been wondering about what I will fix after the surgery when I get to eat real foods again. And these recipes sound amazing! Very glad I found this site.

I had a sweet tooth so I made this for dessert for me and my MIL.  Sure its nothing new.. but it was so goodSF jello (white chocolate) prepared by directions on box (however next time I am gonna add some coolwhip to it to make it more like mousse).LITE cherry Pie fillingSF hershey's Chocolate syrup (YUM)- dished pudding out into 4 small single serving dishes- Let it chil- added a few swirls of chocolate syrup -topped with 2 Tbsp cherry pie filling- let it chill through dinner (about 30-45minutes)

Right now I can only have about 1/2 cup of this, but it is amazing!  Insead of white rice, I use instant brown rice.  Also, instead of regular Cheddar Cheese, I use low fat.  YUM!!

Mexican chicken and rice casserole

Ingredients

1 can fat free cream mushroom soup
1 can fat free cream chicken soup
1 can water
1 can black beans, drained and rinsed
1 can Rotel diced tomatoes with chilies
1 1/2 c rice
1 pkg taco seasoning
cilantro and green onions chopped (optional)
frozen boneless,skinless chicken breasts
shredded cheddar cheese

Fat: 2.8g
Carbohydrates: 19.1g
Calories:240.5
Protein: 32.6g
 


13x9 in glass casserole dish with cooking spray
wisk soups, water and taco seasoning in bowl then pour into bottom of dish
sprinkle rice over soups
place chicken breasts FROZEN over soup and rice
pour beans and tomatoes over chicken, cilantro and green onions sprinkled on top.
Cover with foil, bake 350 degrees 1 hour,40 min.
remove foil, sprinkle shredded cheese over to melt.

I cant do low fat MAYO.  So i am trying to get away from the regular as well. Came up with this

1 laughing cow cheese wedge (35cal, 1g FAT, 2g PROT)
3-4 small pieces Pimentos (jarred)
smoked parprika
garlic/onion powder

- mash the pimentos with a fork.
- fold into the laughing cow wedge
- season with garlic powder and smoked paprika to taste

I spread this over 1/2 of sandwich thin (multigrain) and topped with 2oz shaved deli ham..  OMG this was so TASTEY! Calories: 145, Fat: 3.5g, Carbs: 13g, Sugar: 2g, Protein: 14.5g

I found this on a recipe site; it's a great PIZZA CRUST made without any type of bread product:

Cauliflower Pizza Crust

1 cup raw grated or chopped steamed cauliflower
1 egg
1 cup mozzarella cheese
1 tsp oregano
2 tsp parsley
optional: Italian Seasoning
Makes 4, 1-slice servings.
(per serving) Calories: 178  Protein: 17
Can be doubled for a larger pizza.

*Preheat oven to 450 degrees.
*Spray a cookie sheet with non-stick spray.
*In a medium bowl, combine cauliflower, egg, mozzarella and all desired spices.
*Press evenly on baking pan or pizza stone. Drain moisture for crisper crust. Don't spread too thin or it will fall apart, too thick and it's doughy in the middle.
*Bake for 12-15 minutes (up to 20 minutes if you double the recipe). You may turn over once if desired.
*Remove the pan from the oven.
*Add your favorite sauce, toppings, and cheese.
*Place under broiler, on high heat, until cheese is melted.

Pizza crusts can be frozen after the initial baking and used later.
