Oatmeal Raisin Cookies - from 'Wow! This is...

*Combine in saucepan:

1 1/2 Cups raisins                                                      1 1/4 Cups apple juice

*Bring to a boil and cook 3 minutes.

*Stir in:

1/3 Cup butter

*In mixer bowl:

2 eggs, beaten                                                                  2 1/2 Cups whole grain flour
1/2 Cup barley malt or 2 tsp. stevia, opt.                      1/2 Cup Oat Bran
1 Cup rolled oats                                                              2 tsp. Cinnamon
1/2 tsp. Nutmeg                                                                1 tsp. Baking Powder
1/2 tsp. Salt                                                                        1 tsp. Baking Soda
1/2 Cup Chopped nuts

*Add raisins and mix until just combined (it is a very stiff batter)

*Dropp by spoonfuls onto cookie sheet.
*Flatten slightly
(they stay in the shape you drop them in - the do not flatten while cooking)
*Bake 350 degrees for 15 Minutes

Yield: 1 1/2 dozen cookies


Note:
I use my Tablespoon scoop from Pampered Chef to measure the cookies, and I don't bother to flatten them. They are tasty - and the fill that need for something crunchy without being completely horrible for you... My cookies batter usually yields about 3 dozen cookies.
