coffee cup muffins post

Not only are these muffins delish, they also put on quite a show in the microwave.  First the batter rises to dizzying heights, and you're certain it will spill over, making a mess.  It certainly gave *me* a fright.  I try not to mess the house up too much between the cleaning ladies' visits, as I pretty much loathe housework of all sorts (I have officially lost my accumen for vacuumin'.) Sorry....

But then, just when you can't stand it any more, the batter shimmies back down to a more proper height, right before the timer dings.

Hey presto!  It's yummy and the best fun I've had all day.  It's been a quiet day.

Coffee Cup Muffin (makes 1 muffin)

1/4 cup flax meal or almond meal (or any combination thereof
1/2 tsp baking powder
1 teaspoon splenda (I use 1 or 2 packets)
1 teaspoon cinnamon
1 egg
1 tsp melted butter (I use 1/2 tsp olive oil instead)

Mix the dry stuff together in a coffee cup, then add the egg and the oil and mix. 

Nuke for 50 to 60 seconds and upend the cup... it pops right out, and enjoy

Home from having gall bladder removed.

Hey all. Let me start off this post by saying I am very tired from the pain meds. So I hope this makes sense.

I had my gall bladder removed on Friday. My surgeon said it was a pretty easy procedure and thankfully none of my hernias have opened up. (he checked) He removed the gall bladder through the incision on my belly button and said that he had to push around a little more than usual. So my stomach is all red and swollen but he said that is to be expected. Stayed overnight in the hospital and was released mid-day Saturday.

I am now on Vicodin ES and just trying to rest. Still pretty tired and mostly just sleeping and sitting half-asleep on the couch. Thanks again for all the support earlier this week. I think I made the right decision b/c when the doctor pushed on my right side I no longer had pain where my gall bladder used to be. My gall bladder was sent to pathology but we both thought this was a good sign. I'm in pain from surgery recovery now, not the same pain I had before surgery. Keep your fingers crossed!

I really don't post much anymore but I still do lurk

Thought this was worth a post... 5 months down and I am in onederland... and what a great place it is to be! Haven't been here since 2003, never plan to leave again.

Thanks again to everyone on the boards for their support and wise words during my journey.

I can touch my toes!

I have been trying to exercise at least 3-5 times a week. I've been doing yoga, tai chi, physical therapy (torn acl from before surgery), and walking in the park. I've noticed myself getting stronger and having more endurance.

The other day one of my eighth grade students asked me if I could touch my toes. My kids know I have been exercising more and are very interested in the idea of me becoming healthier. Right there in front of the whole class I bent down to touch my toes easily. I then did it again to find I could halfway walk my hands out onto the floor. My kids couldn't believe it. I couldn't believe it.  There was no way I could have done this before surgery.

Yep, I'm getting healthier!
