Surgeon TestimonialBrian Gluck, D.O.Dr. Gluck is my Saviour. At first I thought he was a little outspoken. He told me like it was. I had to lose weight before he would even touch me. I did not realize it at the time but he did this to make sure that I was committed to having this surgery and using it as a tool to help me lose the weight I needed to lose. I now view him as a very understanding and sweet man. He had faith in me when my own husband did not.
Dr. Gluck's office staff and himself have been great all through this and are very supportive even after surgery. If I have any questions what so ever I feel that I can call and someone will be there to help me through what ever it is I need help with. Dr. Gluck and his wife(also his nurse) even gave me their home phone number to call if I needed to use it. How many doctors will do that?
Right from the beginning they made sure I understood the risks involved and exactly what was going to happen before, during and after surgery. They offer support and aftercare through support groups, through their office and schedule appointments that involve seeing their nutritionist, nurses, exercise specialist, and the doc himself. Dr. Gluck becomes a part of your life for life.
I rate Dr. Gluck and his office staff with a 10+++ on a scale from one to ten with ten being the highest possible rating. They are great people and I would recommend them to anyone! Dr. Gluck is an excellent surgeon with a great history and a bedside manner that most patients wished all doctors had.

4 small skinless boneless chicken breast halves
Dijon or whole grained mustard
4 slices deli ham
4 slices Swiss cheese
1 tablespoon butter, melted
¼ cup Panko or fresh breadcrumbs (1 slice of sandwich bread pulsed in the food processor)
Preheat oven to 350°F. Place each chicken breast half between two pieces of plastic wrap; working from the center to the edges, lightly pound with the flat side of a meat mallet or the bottom of a small heavy skillet to a uniform ¼ inch thickness. Remove plastic wrap.
Place one slice of ham and one slice of cheese on each chicken piece then smear with mustard; fold in the sides and roll up jelly-roll style, securing both ends with toothpicks. Arrange chicken rolls in a shallow baking dish; brush with melted butter and sprinkle with the fresh or Panko crumbs. Bake for 25 to 30 minutes, until chicken rolls are cooked though. Cut each roll into ½ inch thick slices and fan out on individual plates.
WLS ½ roll portion, about 4 ounces: Calories 157, fat 7 g, carbs 2 g, protein 20 g

2 pkts. Knox® Gelatin
1/2 cup cold water
16 oz. can lite peaches, reserve liquid
8 oz. pkg. fat-free cream cheese
2 pkts. sugar substitute
In blender, sprinkle gelatin over water; let stand 2 minutes.
Meanwhile, in small pan, bring reserved juice to a boil. Add to blender until gelatin is dissolved, about 2 minutes. Add peaches, cream cheese and sugar substitute to taste. Blend until smooth. Pour into cupcake or mini-muffin paper cups. Chill until firm. Garnish with peach if desired. Makes 6 servings.

1 pkg. sugar-free vanilla instant pudding (6 serving size)
3 cups skim milk
1/2 cup pumpkin, solid, packed
1 tsp. pumpkin pie spice
1/2 cup Cool Whip Lite®
1 cup plain yogurt
1 tsp. vanilla extract
Mix pudding and skim milk with wire whisk or mixer for 2 minutes. Fold in remaining ingredients. Garnish with a sprinkle of cinnamon and a dollop of Cool Whip Lite. Makes 6 servings.

Hard Times on September 18, 2010 6:45 am
It's been two weeks since I buried my husband. In that time I have found myself starting to say something to him only to realize he's not there anymore. I often look at the couch and think I see his form sitting there. My marriage was over a long time ago as far as the context of a marriage goes, but I still loved him as a friend. He was my best friend. We spent 25 years together with a lot of bad times and a lot of good times. I knew this was coming with his illness but I am having a real hard time dealing with the loss. I never thought in a million years that it would be this hard. I'm trying my best to stay strong for the boys and to take care of them and myself. I find myself wanting to drown my sorrows in a bottle quite often and I know that is not the answer. But it does help ease the pain for a short period of time. The emotions I am going thru sky rocket from helplessness to lonelyness to feelings of guilt to just plain pain. I'm sorry if I am not too talkative these days, please understand it is not you people, it's me dealing with all this. I am truely greatful to each and everyone that I have met here that has given me support and words of comfort.

I want to thank everyone for being there for me through the loss of my husband. I can not begin to be able to express how much it meant for me to be able to talk to each and everyone of you. Also for all the Prayers and well wishes during that period. It's a real treasure to have such good friends and support. You all are the best by far!! THANK-YOU all!

Bacon Wrapped Stuffed Jalapenos on July 21, 2010 1:36 pm
18 medium fresh jalapeno peppers
8 ounces fat free cream cheese, room temperature
1 cup shredded 2% sharp cheddar cheese
3 green onions, very finely minced
12 ounces thin-sliced turkey bacon
Cut each pepper in half and scoop out all of the seeds and membranes with a spoon.
Blend cream cheese, cheddar, and green onion until smooth and chill. Divide the filling among the 18 peppers, rolling the chilled cheese into a small pepper shaped bullet, filling one half of each pepper and topping with the other half to enclose it.
Wrap a slice of bacon slightly overlapping to cover the peppers completely. Secure the ends with a small bamboo skewer or toothpick and arrange on baking sheet (on a wire rack if you have one). Can be refrigerated at this point until ready to cook.
Preheat oven to 375 degrees. Roast the peppers 35 to 40 minutes, until bacon is browned and jalapenos are softened. Serve hot.
Makes 18 large appetizers.

White Chicken Chili on July 21, 2010 1:11 pm
Here's a quick and easy chili. Use store-bought rotisserie chicken or leftover turkey if you have them to make this dish even faster. Serve this high protein meal with a dollop of fat free sour cream and a sprinkle of chili powder.
1 medium onion, chopped
2 garlic cloves, minced
2 tablespoon olive oil
Two 15-ounce cans Cannellini or white beans, drained
2 tablespoons flour
4 cups diced, cooked chicken or turkey
1 cup corn
One 4.5-ounce can diced green chilies
Two 14.5-ounce cans chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon oregano
Salt and pepper to taste
Sauté onion and garlic in olive oil in a large pot over medium high heat until onion is tender. Puree one can of drained beans and set aside. Stir the flour into the onion mixture and cook for one minute. Add chicken, corn, chilies, broth, cumin, chili powder, oregano, beans, reserved bean puree, and one cup water. Season with salt and pepper. Reduce heat and simmer for 30 minutes. Makes about twelve 1-cup servings

Gourmet Tuna Salad on July 21, 2010 12:18 pm
Two 6-ounce cans solid white tuna in water, drained and flaked in big chunks
2 hard-boiled eggs, finely minced
1/4 cup finely grated carrot
1 tablespoon green onion, finely chopped
1/4 cup light mayonnaise OR miracle whip
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
1 tablespoon finely chopped dill pickle OR sweet pickle relish
1 tablespoon dill pickle juice
In a small bowl combine the tuna, eggs, carrot, green onion, mayonnaise, salt, pepper, pickle, and pickle juice. Mix until well combined. Makes 4 servings.
Per Serving: Calories 211; Protein 23 g; Fat 7 g; Carbs 1g; Sugar 1 g; Sodium 520 mg
I wrap this in a flat-out wrap with some lettuce and tomato, makes a delishious low carb meal.

Losing again on July 21, 2010 12:06 pm
I am on the losing end again, I weighed in this morning and am happy to report that I am down 189 pounds now. It is good to see the scale moving again. I do need some motivation to get back into the exercising routine again though. Have been a little lax on that since I got sunburned so bad. I hope to get back into it soon.

High Protein Fruit Spread recipe on June 12, 2010 12:18 pm
High Protein Fruit Spread
8 oz fat free cream cheese
3 scoops Any Whey Protein Supplement
½ cup 100% fruit spread (no added sugar)
2 packets Splenda
2 tsp. vanilla extract
Leave cream cheese at room temperature for 30 minutes. Mix all ingredients with a hand mixer until smooth. Use on toast, English muffin, pancakes or as a dip with fresh fruit. Makes 8 servings.
Nutrition information per serving: 66 calories, 10 grams protein, 2 grams carbohydrate, 0 grams fat, 211 mg sodium.

My Story
My story started in 2004. At that time I weighed over 300 lbs. and had various co-morbid medical problems. I went to the orientation seminar and scheduled a consultation with the doctor. Went to the consult, doc said I needed to have the RNY and they went to work on getting insurance to cover the surgery. It took forever for insurance to respond and by the time they did I no longer could work because of having too much weight on my legs, causing my knees to worsen and cellulitis and lymphodema to settle in. I lost my insurance. Therefore I could not have the surgery. I was devestated. It was five years before I was able to obtain the proper insurance to finally get the surgery and I had gained another 100 pounds. In May of 2009 I had my second consult with the surgeon. I weighed in at a whopping 479 lbs. (WOW! I couldnt believe I had let myself get that big!) He told me again that I needed the RNY and that I had to lose ten percent of my weight before he would touch me. I was again disappointed. I did not think I could pull that off by myself. I went to lean cusine meals for breakfast and lunch and just a piece of meat and a piece of fruit for dinner. By my next doctors visit I had lost that ten percent. I couldn't believe it! I was so happy, he scheduled surgery for October 13, 2009. I continued on the path I was on and on the day of surgery I had already lost 69 lbs. The doc was very happy about that, and said because of that my surgery had gone better than he expected.
Before surgery I was a type two diabetic, had high cholesterol, high blood pressure, arthiritis and degenerative joint disease in my knees, cellulitis, lymphodema, asthma, was on a c-pap machine, and oxygen.
The day after surgery, I went off all meds. I only take my vitamins and occasionally a tylenol or two for my knees.
It is now April and I am six months out of surgery. I have lost a grand total of 173 lbs. so far and am feeling wonderful. I still have pain in my knees, but it is tolerable now. I am hoping that as the weight sheds that will also get better.
I get all kinds of compliments at how well I look. However when I look into the mirror I still see a fat person. I wonder if I always will? I still have over 100 lbs to lose and am determined to do it by the time my year is up! Wish me luck!!!
