Today I put 1/3 cup of low fat cottage cheese in a bowl with a peeled and sliced pear on top. It was quick and easy. Decent amount of lean protein in the cottage cheese.

The Chili Cook-off on September 27, 2008 3:05 pm
We went to the chili cook-off today at Stone Mountain. I have finally started feeling better after almost a week of being out of commission. We saw Les Miserables at the theatre on Thursday. Great show! Friday I finished painting the walls in the basement so now it's ready for the next step... sealing the cement floors. Then I am moving on to electrical and doors/trim.
The cook-off was fun. We did alot of walking around and I tried several chilis. They give you little samples and, honestly, I don't like chili with beans and I don't like really hot/spicey so after about 5 tastes, I just sipped the sauce and dumped the rest. After about 20, I didn't even taste anymore. The people watching was great!
It's nice to feel like I am back on my game and in better health. I plan to get back on my exercise routine on Monday. I think the med's the doctor gave me are helping with my mood swings. That's a BIG help all by itself. Not feeling as anxious or stressed as I was is a great change.
We bought our tickets to San Francisco. Going to visit December 6 - 14th just like last year. It'll be nice to be the same weight I was then. At least everyone has seen me now and it's for a happy occaision and not a sad one.

Out of commission = wasted time on September 18, 2008 10:51 am
My abdomen has been killing me the past 2 days with my recurring infections. It's like ulcerative colitis and I have to wait for my antibiotics to work. Yesterday, I was laid up on the sofa most of the day and today, it's bed. I guess it's good that I am resting but I am just flustered. When this happens, I can't exercise, can't wear restrictive clothing like jeans and my abdomen is swollen (distended). I just feel bloaty, achey and it's frustrating.
But I am trying to stay positive and eat right. Had a carnation instant breakfast this morning and one cup of coffee. For lunch, I had a pear and some oatmeal. Not the "lean protein" I probably should have eaten but I am drinking lots of water. I will have some milk and/or yogurt for a snack this afternoon too.

Last night's dinner on September 18, 2008 9:23 am
Last night I boiled some boneless/skinless chicken thighs with a medium/large onion (chopped into large chunks) for about 40 minutes. I put the chicken in a bowl and dumped the onions & broth. Then I used the same pot to make the enchilada sauce. Lowry's echilada sauce is very good (3cups water, 1-6oz can of tomato paste and the packet). Bring to a boil and simmer for 10 minutes.
Normally, this is when I pre-heat the oven to 350.
I use preshredded low fat cheese (like I use for taco bar) and corn tortillas. I put the cheese in a bowl and I chop up the chicken with a cleaver to small pieces/bits.
When the sauce is ready, I take out a casserole pan and put it on the counter in front of me. I ladle the enchilada sauce into the casserole pan to create a layer of sauce on the bottom. I then dip the tortillas into the sauce (in the pot) to make them softer for rolling. Then transfer to the casserole pan and put about 1oz of chicken (roughly - small handful) and anoterh 1oz of cheese and roll them-- putting the seam or overlap on the bottom to hold together. Then I repeat. This makes about 8 enchiladas. Pour the remaining sauce on top of the entire dish. Then use the remaining cheese to sprinkle on top of the whole thing.
Pop in the pre-heated oven and cook for 20 minutes. Eveyrthing is already cooked. This step melts the cheese on top and sort of melds everything together letting the tortillas soak up the sauce.


This took a bit of time to prepare but it was a nice meal. Since I didn't make a veggie, I drank a V8 before dinner.

Last night, I baked 2 chicken breasts in the oven with a little teriyake sauce and satueed some yellow squash. The squash was from a local produce stand. It was so much better than what I get at the grocery store. I also picked up a couple tomatoes, local honey and some peaches. The peaches are also MUCH better than Kroger's.
Today, I woke up at 6:30am and couldn't get back to sleep. I went downstairs, took out the dogs, put on some coffee and tried to talk myself into exercising early. I ended up doing 500 ab crunches and 45 minutes on the bike. Not bad considering I wasn't gonna do it all.
I have a doctor's appointment today that's 2 hours from my house so it makes for a long drive. The nice thing is the doctor has wireless internet so I am typing this from the waiting room. Not many people here use this capability but I think it's great!
So I still have a 2 hour drive home but I'm hoping he sees me soon and I can be back on the road in 30 minutes or so.
