Unjury Fudge

UNJURY Chocolate Peanut Butter Protein Fudge!!!

1/4 cup of margarine/butter
1/2 cup peanut butter

Melt together, do not boil - warm up just enough to melt the margarine and soften the peanut butter using very low heat--DO NOT boil or cook. Remove from heat, blend the margarine and peanut butter thoroughly. Cool for 2 minutes

In another bowl, combine 2 scoops of Unjury Chocolate Protein Powder
10 pkts of Splenda (1/3 cup)
Mix well

Slowly add the Unjury mixture to the peanut butter/butter mixture. Mix extremely well (the secret of this fudge is mixing extremely well) I use my stand mixer on high to get as smooth of product as possible.

Pour into a container (I use a glad square container with lid), seal and refrigerate until set/firm. I store mine in the fridge BTW!!!

Makes 9 small servings; 11.5 gm Protein per serving; 6.8 gm Carbohydrate per serving

Made this yesterday and it was great. I modified the recipe a little bit though. Used a zero trans fat margarine, and used the Trader Joe's Vanilla Protein powder with Davinci butterscotch syrup. I also only used 6 packs of Splenda.
This is a great treat! Poured it into a pie tin and the servings were pretty good size.
Yummy. All sorts of options with this recipe. Thanks, this is my first treat in a year that doesn't come as a smoothie.

Forgot that I also used add crushed pecans to the goop, and poured the other half on top for topping. Real good.

I'm pretty happy now. But unlike a year ago when I was fat and happy, now I'm just happy and healthy. I am approaching my 10 pound meca, but I still see myself as pleasantly plump. In fact, most of the BMI scales and other calculator still indicate that I'm overweight. I was in sixth grade when I started to gain weight. I was definitely an emotional eater, and ate everyone problems away. My twenties I experimented with several diets, but usually ended up the wrong side of the yo-yo. My thirties, more diets, more weight. My fourties, more diets, bad health, bad knees, depression and my max weight ever. My fifties, I have spent the past year losing 150 pounds, relearning and educating myself about health, fitness, and nutrition.
Even if I don't lose another pound I am extremely happy with my new body. I have control of my health, I haven't taken any medications for nine months, haven't had a headache in six months, haven't dumped in over six months. I have met an incredible group of people who continue to inspire me (all of you can take a bow). Life is good. I enjoy my new found life, and my obsession with exercise and activity. I worry a little bit about the family and the fact that we no longer have food as our common bond, but we are all working on that. So in conclusion, I can really enjoy where I am at. If I gain weight I might get disappointed with myself. I am going to live at this weight for at least a year prior to even thinking about visiting the plastic doctor. I'm alive, and that certainly beats the alternative, which is where I was heading. So icing on my cake is probably enjoying my oatmeal bomb every morning! Over and out.

Oatmeal for breakfast!

Nov 01, 2004

My favorite meal is still breakfast. I have been having the same meal for almost year. I have a bowl of oat meal with 2 tblspoons of flax seed meal, a scoop of Unjury, cinnamon, a pack of splenda, and 1/2 cup of soy milk. That gives me my pick-me-up in the morning and more than 20grams of protein to start the day. I sometimes throw in a 1/3 cup of flax cereal with pumpkin seed crunchers (trader Joes) to give it some extra texture.
