Diabetic Peanut Butter Balls

  • 1 kg kraft sugar-free sodium-free peanut butter
  • 2 cups Rice Krispies
  • 1 cup Splenda granular
  • 1 1/2 cups unsweetened coconut (or more)
  • Directions

    1. In a large bowl, combine peanut butter, Rice Krispies and Splenda until well mixed.
    2. Pour coconut into a small bowl.
    3. Drop peanut butter mixture into the coconut by the teaspoonfuls to coat.
    4. Place on a waxed paper lined cookie sheet and chill minimum 1 hour.
    5. Store in air tight container for up to 3 weeks in fridge.

    Fruit Crunch Sundae

    | 30 min | 10 min prep | SERVES 4

    Ingredients

  • 1 cup quick-cooking rolled oats (not instant)
  • 1/2 cup sweetened flaked coconut
  • 1/2 cup sliced almonds or slivered almond
  • 3 tablespoons vegetable oil
  • 2 tablespoons good honey
  • 8-10 strawberry, small-diced
  • 1/2 cup blueberry
  • 1/4 cup pineapple, small-diced
  • 2 cups plain yogurt
  • Directions

    1. Preheat oven to 350°F.
    2. Toss the oats, coconut, almonds, oil and honey together in a large bowl until they are completely combined.
    3. Pour into a sheet pan and bake, stirring occasionally with a spatula, until the mixutre turns a nice, even golden brown, about 20 minutes.
    4. Remove the granola from the oven and allow to cool, stirring once.
    5. Combine the strawberries, blueberries, and pineapple in a bowl.
    6. In 4 ice cream sunadae glasses, layer first the fruit, then the yogurt and the cooked granola alternately until you fill the glasses.
    7. Serve with a long spoon and enjoy!

    How much Peanut Butter ? It says kg ...Love your recipes by the way .. Thanks ..  I am also wonderfing where to get unsweetened coconut . Shirley

    Shirley you can get the unsweet coconut over in the baking section in WalMart. It should be right next to the sweet flaked coconut. That is where I have found it.
