Minted Kiwi Salad

2 kiwi fruits, peeled and sliced into 1/4 inch thick rounds 1 banana, sliced into 1/2 inch thick rounds 1 cup sliced strawberries 1 orange, sectioned Dressing: 1 cup nonfat, sugar free vanilla yogurt 2 tablespoons fresh minced mint 1/2 teaspoon cinnamon On a platter, arrange the kiwi, banana, strawberries and orange in rows. Combine the dressing ingredients. Serve the dressing with the fruit. 4 servings, 1 cup each. Pepperoni Pizza Salad

3/4 Cup refrigerated Garden Vegetable Pasta Sauce 1 Tbsp olive oil 1/2 tsp dried Italian seasoning 1 Cup (4 oz) Mozzarella cheese, shredded 1/3 Cup (1-3/4 oz) small pepperoni slices, halved 1 Cup fresh mushrooms, sliced 1 Cup Green bell pepper, chopped 1/4 Cup black olives, sliced 1 Tomato, chopped Cook rotini to desired doneness as directed on package, omitting salt. Drain; rinse with cold water. Meanwhile, combine pasta sauce, oil and Italian seasoning in a large bowl; blend well. Add cooked rotini and remaining ingredients to pasta sauce mixture; toss gently to coat. Refrigerate until serving time.

Fruit Salad over Baby Greens

1 cup diced ripe cantaloupe 1 cup diced ripe mango 1 cup diced papaya 1/4 cup minced red onion 3 tablespoons fresh lime juice 1 tablespoon olive oil freshly ground pepper to taste 1 7.5 ounce bag baby greens, rinsed and crisped In a covered container, combine cantaloupe, mango, papaya and red onion. Whisk together lime juice, olive oil and pepper. Pour over fruit and gently stir to mix.

Refrigerate until ready to serve. Arrange greens on each of 6 salad plates.

Divide the fruit between the plates and drizzle with some of the juice mixture.
