Oh, man . . . jambalaya over eggs . . . Mmmmm Mmm
Met up with my best friend yesterday for lunch and a movie (Mr. Popper's Penguins . . . good movie), and we went to Copeland's Cheesecake factory at Atlantic Station. Oh, my. I ordered from the brunch menu and got their Jambalaya Omlette. It was soo good.
Fluffy open faced omlette topped with chicken, shrimp, andouie (SP?) sausage in a zesty sauce with peppers, onions and mushrooms. I asked them to add a little colby cheese on top . . . it was perfect. Never considered having something like jambalaya over eggs. It was GREAT!!!
I might have to do some jambalaya over fluffy scrambled eggs at home.

I swear, a well-made, fluffy omlette with stuff in it & on it is really one of my favorite restaurant foods. Big yummo! That sounds good to me.
