DS saved my relationship with food (food porn included)

Before the DS I was beginning to have an unhealthy relationship with food. I'd glare at a modest plate of grilled chicken and salad for several minutes before eating it. Sometimes I'd tell my plate of food it how much I hated it, loathed it, wished for a better world where I wouldn't need to eat to survive, because I never wanted to see food ever again. In hindsight, I think I may have been on the road to anorexia with this kind of thinking.
Now that I have joined the dark side and healed enough to eat different things, I'm finally able to accept food for what it is: something to be enjoyed!
Pre-DS I would have never dreamed I could have taken this beauty home from the Ukrainian butcher shop guilt-free:

Smoked pork rib. Eat it straight up, or chop it up and fry it with onions to add to other foods, or slice off a slab to flavor soups and stews. It is wickedly evil good with a cup of cold borscht during the summer.

Yummy, that stuff looks good, kind of like what I get in Germany when I visit my dad. You're right gooooood stuff!
That's the stuff my dad chops up small and then renders the fat out of it until pieces are brown and crispy, then you spread it, fat and pieces on good old Bauern Brot. (farmers bread). That's a heavy rye bread with a extra thick crust.

Inge, I love german food too :) They know exactly what to do to make a pig taste yummy. (Pigs aren't just cute, they're delicious!)
And your dad had the right idea! Black bread and a good, dense rye are common in Eastern European cooking too, and they all do the same thing! They put crisped pork and lard instead of butter on the bread :)
Ukies also have a pigfat product called "Salo" which is just smoked pigfat, sliced very thin and served with salt and bread. It's something on my list of things to try now that I have the DS.

Here's my afternoon snack: cold borscht with chopped dill, and lots of sour cream along with a slab of the smoked pork.
I couldn't wait and took a bite out of the pork... It was just too tempting and delicious.
All gone! Sadly you can't eat the skin from the smoked pork, it's too leathery. However you can save it and toss it into a soup stock.
In case any of you are in the TRi-state area, here a picture of the shop's address on their really cool shopping bag. I love this place! Sadly these kind of butcher shops are disappearing quickly, so if you're close enough to shop here, do it! You won't regret it. They make the BEST kovbasa, smoked hams and veal hot dogs! Your family and fiends will salivate and nom happilly in a state of pork bliss.
