Palmini "Noodles" review and questions.

I made a lasagna last night with palmini "lasagna noodles".

The sauce I got was awful but I'll be making my own from here on out. I used daiya and violife cheese and chicken and zucchini filling. It says you just have to rinse the noodles but says you can boil them for a softer texture. I would recommend boiling them. I found them at Walmart in the gluten free section.

They are kind of expensive but not to bad. They are definitely not pasta but ok if you want a lower carb option. They are made from heart of palm.

Have any of you used these?

I have not, but I've made lasagna with slices of zucchini instead of noodles. That works pretty well...

Not to hijack but when you made the lasagna with the zucchini did you have a lot of water that was in the pan once it baked? I'd love to try this recipe but zucchini has a lot of water so I was wondering how to avoid that if it is even possible.

it's been a couple of years so I can't remember - but I may have sliced it, salted it, and let it drain for awhile - or else grilled it first (before putting it in the lasagna)

You have to bake the zucchini first. Eggplant can be used without baking.

I haven't but they look interesting! I will have to take a look at those the next time I am at Walmart! When we do pasta night we've gotten edamame noodles from Costco and they worked well and my kids like it too.

I have used the "spaghetti" ones and I don't boil them, I rinse them, dry them and then cook them for a few in a pot then add my sauce, usually Alfredo. I also have used the Shirataki noodles the same way, different brand.

I have only tried the lasagna but I think I'd like the noodles more not boiled.

I thought they tasted okay but I think zucchini or eggplant work just as well as lasagne noodles. And zoodles or butternut squash noodles made with a spiralizer are just as good for spaghetti. And they are much cheaper. Investing in a good spiralizer is worth it. Have you seen the slicer that makes sheets out of veggies? It's kind of like the spiralizer. They are 20 dollars at Walmart. I might get one next month. I do have a spiralizer almost just like the link you posted :)

I never thought of using eggplant and I love eggplant. I like the palmini but not love it. I also missed the real cheese but we do what we have to do I guess!
