Coconut Question

My daughter makes a killer coconut shrimp but all my info (for the pre and post op) says no coconut.  Is it ok to have some coconut shrimp or is it off my list for good?

Is there a way to get the coconut flavor (lo cal of course)  if I can't have the coconut?

Frisco got any ideas?

Sounds like a great dish. I have had other shrimp and it has gone done well. Sounds like a delicious din-din.

I think the issue is with the fibrousness of the actual flesh. I want to say I read on here a few months ago about someone who was eating a lot of coconut and actually had to have surgery to remove a fibrous ball of it from her sleeve.

I would imagine you could get the flavor w/o actually eating the pulp.

I'm also curious what others have to say

I don't understand why you can't have coconut ever again?  Is that something your nutritionist told you? 

I am on a low carb program because I choose to be, however, I've had some unsweetened coconut, I also use coconut oil and sometimes bake with coconut flour.   You had surgery 2 weeks before I did and on my 4th week post op I was told I could eat whatever I wanted, but to be reasonable about it, but I chose to eat low carb instead and I've had no issues.  

You need to ask your doctor or nutritionist why coconut is a no no because some of us do use it.
