Oh Yum!! Watermelon salad

This is the best summer treat I've found in a long, long time.  Enjoy!

4 cups cubed seedless watermelon
1/2  hot house/English cucumber, thinly sliced
1/4 cup fresh mint, chopped.  or  2 TBS dried mint flakes, crushed
1 TBS canola oil
1/2 tsp salt
1/4 tsp pepper
1 TBS lime juice

Mix all ingredients together and cool in refrigerator for at least 2 hours before serving.  I like it better after it sits overnight.  The mint really comes through.

 I have had something similar a while back where they used red onion, cucumber and some feta cheese :) it was awesome

I'll try it soon - watermelon is my new "go to" summer food - love it on the golf course when it's blazing hot out there - cools me 'n sleevie from the inside out.

Us new WLS people love to hear about the ones that have had surgery a few years. It really helps us and give us hope. I love watermelon.
