First is you need a vitamix or a nutribullet.  If you are using a vitamix you do not need to add any water.

I did this in my nutribullet but a friend of mine did the same without the water in the vitamix (use the stick to mix instead of the water)

Ingredients:

1/4 cup roasted almonds (doesn't matter if salted or unsalted)

1 packet of Stevia (I used Sweet Leaf because it doesn't have the strange aftertaste)

2 cups ice cubes

Cinnamon (amount is just as desired)

Almond or Vanilla extract

1/4 cup water (only if using the nutribullet this is necessary since the nutribullet is harder to mix than the vitamix, motor is just as powerful though)

 

Please note you can subsitute the Almonds for another nut like cashews or peanuts etc.  Also please note if you do not like stevia you can use 1/4 of cup honey or agave nectar but note that it will have more calories that way.  If you are using a nutribullet and use honey or agave nectar you may not need as much water if any.

 

Disclaimer:  Note: Many doctors say no seeds or nuts until 2 or 3 months post op.

I have a Vitamix and I haven't tried that. Not sure I will because nuts and especially salted almonds and peanuts are such triggers for me. I use 1 cup Fage and 1 cup frozen unsweetened fruit like cherries or strawberries or peaches, no ice, stevia and couple drops of almond or vanilla extract. Makes a wonderful frozen yogurt for 2 people.

You can also do cashews, or hazelnuts really any nuts.  Also avocado or bananas.  All three will leave the cream consistency making it taste more like ice cream.  I have tried to do frozen greek yogurt as well.  But the other recipe really gives me the feeling I'm eating ice cream more so than the yogurt.

The avocado one that I remember is:

1/2 avocado

2 cups ice

mint extract

handful of spinach

1 packet stevia (or 1/4 cup agave nector or honey)

semi sweet dark chocoloate chip.  (to be stirred manually in at the end not blended)

I wonder how it would work substituting the nuts for roasted sunflower seeds.  I would assume that the good fats from the sunflower seeds would work just the way nuts do to get the creamy consistency.  Maybe it would be less of a trigger using them and still taste good.

That frozen yogurt you make sounds really good, Mimij.  Do you blend it in your Vitamix?

I'm like you in that nuts are proven trigger foods for me, so I'm steering clear of them.
