Planning my thanksgiving dinner

Hi all,

I'm cooking thanksgiving dinner at home this year.  We usually go to my son's house, but last year my daughter requested  that I cook this year, as she is missing Thanksgiving she remembers from childhood.  So I want to cook my traditional meal, but there is so much that I won't be able to eat.

So I'm planning this menu for me. 

I'll be eating Turkey, green beans, mashed cauliflower, my grandmother's cucumber salad and perhaps a taste of sweet potatoes.

My family will be eating many more carbs than I. But I'm going to make this work. 

How are you handling the holidays this year?

Great Planning Carol! 

For me it is Turkey, green beans, and a touch of sweet potato.  I like the cauliflower mash idea.  Do you have a recipe you might recommend?

Here's the recipe I use..  the original used sour cream and I substituted the Greek yogurt.  The original also added 2T of butter.  Sometimes I add a little butter.  There are a lot of nice low carb low calorie recipes with cauliflower and zucchini out there.

Mashed Cauliflower

Ingredients

2 x 10 oz bags frozen cauliflower
1 soft chicken bullion cube
4 oz. Nonfat plain Greek yogurt
1 tsp garlic powder
1 tsp parsley
Salt & Pepper to taste.

Butter flavored cooking spray

Directions

  1. Cook the frozen cauliflower by package directions until soft. Drain.

  2. Dissolve the chicken bullion cube in 1/4 to ½ cup ho****er.

  3. Mix with a standing mixer the cauliflower, Greek yogurt, chicken broth, parsley, garlic powder and salt and pepper.

  4. Pour in a small casserole dish.

  5. Spray top with butter-flavored cooking spray

  6. Bake, uncovered for 15 minutes at 350 degrees. Brown under broiler to crisp top, if desired.

We are going to my cousins home for turkey day.   I am planning to eat turkey, a tiny bit of potatoes and some homemade sugarless applesauce.

Going to my sisters, she is an excellent cook..and it worked out well that it was her year (we trade off) 

i didn't want the leftovers in my house....THAT would be A PROBLEM!!

will eat what I want,  not really concerned..celebrating the day, NOT the week....

i can only eat so much anyway, won't force myself, but won't deny myself either.

anyway Christmas is going to be more of an issue for me...OH THE HOMEMADE COOKIES....

Yes, the Christmas cookies are going to be a challenge.  My mother used to make hundreds of cookies of all shapes and sizes every year.  It is one of my fondest memories of childhood.  I used to make cookies for and with the children, but I stopped that tradition when they got older, and I got fatter. 

I think a low carb Christmas will be more difficult, but right now I'm taking one holiday at a time! (smile)

 My mom also made 100's of Christmas cookies and my most fondest memories are of her baking in the kitchen...

I also bake every year, not on the scale of my mom...( she made many different types of cookies) but I also made 100's of our favorites..this year will be different,I will still make our favorites but only a couple dozen not 10's of dozens..and I'm starting on the 23rd and when the cookies are gone there gone not making more....either way it's going to be hard, it's my most favorite time of the year, I will be eating on point until Christmas eve and day..and then back on point...well that's the game plan anyway!
