Recipe of the Day - Stuffed Pork Tenderloin

Most people know that cooking pork is a real *****  It dries out way too easily and, IMO, pork tenderloin is one of the hardest to get right without slow cooking it.  I' made this recipe from Skinnytaste.com last night and let me tell you, it's pretty hard to mess up.  It's the easiest recipe to follow and the results were mouthwatering, juicy, slightly pink and mostly perfect pork.  I did not use sundried tomatoes, instead I just did the spinach, prosciutto, and mozzarella.  I'd think this would be good with roasted red peppers as well, if you like them.

I will say this about prosciutto, GET IMPORTED and fresh prosciutto if you can.  The domestic stuff is ok but if it is pre-packaged, it is way way too salty.  I cooked this for 30 minutes exactly (without a rack in my pan mind you) and the results were deliciously moist and pink pork.  If you don't like your pork slightly pink, I'd cook this for maybe 5 minutes more but that's it.

Hubby made this bean side dish that he created.  It's basically canellini beans, raddichio, some bacon, and garlic sauteed together in a tomato sauce.  Yummy side dish if you like that sort of thing. 

Food porn below :)  This was my plate, pork, arugula salad, and beans.  I couldn't fini**** all! (Don't be alarmed by the extremely pink center of my pork slices - that's the prosciutto!)
