Home recipes for diet jello?

I know this is a long shot, buuuuut....

I am allergic to artificial colors and sweeteners (I get lovely migraines). Is there a good recipe anyone can think of to make diet jello with stevia (which I CAN have) and which might be good for clear liquid stage? Any ideas for funky fun flavors other than just plain ol' lemon and lime? Is making your own jello really hard? Can you keep it fat-free? I don't want more than about 10 cal per serving.

The recipe calls for splenda, but you could try it out with stevia and see what happens.

Looks like both of those call for powdered drink mixes which will more than likely have artificial colors in them. I am thinking follow that basic recipe but instead of drink mixes use extracts. You might also be able to find uncolored drink mixes at Whole Foods or other such healthier choice store. I am not sure how fruit juices would work but maybe using fruit juice instead of water? But then you are going to not be low carb any longer. You can find just about any kind of extract flavoring online. I have had a had time finding anything other than like vanilla and almond in my local grocery.

Yeah, I'm trying to keep my carbs reasonable. Doing a good job so far - ok, today I had an apple, but I'll take that over, say, a piece of bread or a scoop of ice cream. The sugar impact of something like an apple is pretty minor when compared to a lot of other foods.

I would prefer something lower carb than fruit juice though. I may try with lemon or lime juice to start, and perhaps go with a natural extract as you suggested. I'd prefer to not use the drink mixes as I tend to have bad reactions to those.

You might try V-8 Fusion - with juice of 2veg & 1fruit juices, lower calories than pure fruit juice & natural color. Half & half if you like?

Knox gelatin is a pain to get dissolved because it is particles far larger than jello mixes. Im planning to do mine in with my nutribullet milling blade to turn it to dust.

Lime jello is awesome with lots of cottage, thinly sliced celery, carrot curls & walnuts. It can be an entire meal. Served kn a pretty lettuce leaf?

I have made homemade protein jello in the past with gelatin, protein powder, herbal tea with sweetener. I like celestial seasonings, like raspberry zingers.

You can buy little bottles of hard candy flavoring oils in the pharmacy.

Years ago, before sf jello was available, my diabetic grandmother use to make her own jello by heating knox gelatin with no-cal soda (only sf soda at the time). This should also work with today's sf beverages and give you an assortment of flavors. She also use to make her own ice pops the same way, except she froze the mix in molds.
